Bacon for the Family or a Crowd

I have been doing bacon like this for awhile, (since it was mentioned at a Pampered Chef party) on my stonewear cookie sheet. I too use center cut bacon and cook at 400 degrees or so. I love this method but hadn't thought of the rack like another reviewer suggested...good idea! It does come out perfect every time!

Zucchini Brownies

This is a very good brownie recipe! Very moist and they keep well (if they last). I enjoy letting my kids know that you can put veggies in tasty recipes and they have fun telling their friends that they are eating zucchini when they eat these! I have made them as written and also have subbed 1/2 of the flour with whole wheat pastry flour and they turned out well too! Thanks for a great option for my zucchini! Update: I made these again last night and did not get the same results as all of the other times I have made these. 1. I did not use a mixer this time. 2. I made them at night and waited until this morning to frost them. I ended up with a much more of a dry cakey result. Thought I'd share as this isn't how they were the other times I've made them as you can see from my 1st review.

Peach Cake II

This was good! I added the sauce on the top as another reviewer suggested and it made it awfully sweet (but that's not how it was submitted so I'm not reviewing it based on that). Easy to make; I used fresh peaches and probably would add a few more next time. Thanks for the recipe, I will make this again.

Roasted Red Pepper Cream Sauce

This was very good!I wasn't sure I wanted all of the fat content as written and therefore, I used 1 C. fat free half and half and 1 C. milk with some cornstarch to thicken. I also used jarred red peppers. I served it with butternut squash ravioli and chicken & broccoli on the side; however, it was good all mixed together. Can't wait to make this again!

Sausage Sandwich with Sauteed Apple Slices

Very good and easy. I will make this again; the whole family enjoyed it. 1) I'd like to try it with cinn. raisin bread. 2)As another variation I'll try it with chicken & blueberry sausages that we get from time to time. Yum!

Blueberry Breakfast Sauce

Very quick and easy! Makes a nice amount and keeps well if you do have any left. It's 5 stars as written...sometimes I add a hint of cinnamon and a dash of almond extract depending on what I'm using it for. It's great stirred in oat bran; my kids love this combo!

Homemade Chewy Granola Bars

Love these! They freeze and keep well; I always double it. I do let them rest before cutting and wrapping, this helps the bars stay together. I have tried several combinations which is what I like about the recipe. The kids seem to most enjoy white choc. chips, craisins, chopped peanuts or almonds (vs. sunflower kernels), flax (vs. sesame seeds). I use the corn syrup as listed; my daughter has a fructose restricted diet and it is a better choice for her vs. honey.

Big Al's K.C. Bar-B-Q Sauce

This is so good! No need to buy bottled ever again. My daughter has a fructose restricted diet and therefore, can't eat most bottled BBQ sauces. I was happy to find this recipe!

Poppy Seed Salad Dressing

Easy and delicious! Hubby usually prefers "cream" dressings but he said "this is a keeper" and so it is! Kids liked it too. A recipe you can tweak according to your likeness for how sweet you make it (I used less sugar). Do try to make ahead and let the flavors blend. I served it over romaine & spinach w/ avacodos, yellow peppers, seedless cucumbers etc.

Apple Brownies

These are really moist and tasty. Didn't stay together as I thought they would but, hey, who cares? Good enough to overlook that and it may have been that I added a bit more apple. Will definitely make again (and again).

Peach Muffins

A great muffin recipe to use fresh peaches! I'll make these again! I used whole wheat pastry flour for 1/2 of the flour amount. A recipe that works to "play" with according to your taste and "healthier" versions if desired.

Blueberry Zucchini Bread

I'd like to give it more stars if I could. I've tried it 1. as written, 2. with a crumb topping (sinful) and with whole wheat pastry flour subbed for 1/2 the regular flour. They've all turned out well! Not just for summertime; I'll use frozen blueberries and zucchini for the rest of the year!

Hot Fudge Sauce II

We really enjoy this sauce! I use cocoa powder and canola oil instead of the baking squares and a little less cream. I've also made it with the fat free half and half vs. the cream. It turned out great!

Crumb-Coated Chicken Thighs

These were really good and much better than a shake 'n bake! I was out of bread crumbs unfortunately but saw that another reviewer omitted them so I gave it a try without the crumbs on the boneless, skinless thighs I had thawed out. I will make this again and quite possibly without the same way since we really enjoyed them. I skipped the salt.

Crystal's Chocolate Chip Pumpkin Cookies

These are really good; the whole family loved them. I thought I'd try cream cheese frosting on them but they were MUCH better left alone!!! I followed the suggestions of pounding the baking sheet on the counter to flatten them a bit 1st and then baked mine for 16 min. @ 350. They turned out soft, moist and delicious!
