Chicken Pesto Pizza with Roasted Red Peppers and Asparagus

Wow, what fun, something different! I thoroughly enjoyed making and eating this pizza. The kids thought I was weird for making this until they tried it, then they too loved it. Used boneless chicken breast since I didn't have canned and put it all on top of the Bread Machine Pizza Dough by Kim on this site (added garlic powder and dried basil to it). I did add some pizza sauce to the pesto so the kids would think it more like "regular" pizza. I think it would be good without it, but that's what I decided to do this time.

Hasty Chocolate Pudding

People...if making pudding from scratch is this easy, and good, and cheap; why in the world would someone use a boxed mix? I took advice from others and added the butter. Madcook's times were right on for a double batch. Be aware: it's hard to wait until it cools! Simply delicious :)

Old-Fashioned Vanilla Pudding

Really easy, made with ingredients in the pantry and really good! My 7 year old daughter and I had fun making this. Next time I will try sliced bananas layered in it with some homemade whipped topping on top...though this is really good just as it is!

Light Oat Bread

This was very good! To solve some of the other reviewer's comments about the oats "disappearing" into the bread, I added the oats when my add ingredients timer went off. My husband & I like texture in our bread, so this helped with that (my kids don't so I may put the oats in right away when I plan for them to eat more of it). It dried out a bit sooner than some of the other recipes I have tried and that is the only reason why it didn't get 5 stars, I would have liked to give it 4 1/2.

Chicken with Roasted Red Peppers

We really enjoyed this; it was easy to make as well with common ingredients. I used the Italian Dressing Mix recipe by Debby from this site. I only had shredded mozzerella on hand, so that is what I used. I would suggest using sliced, but the shredded worked in a pinch, it just wasn't as "thick" as I would have liked it. Thanks Darla for a new chicken recipe that I will definitely make again (perhaps on the grill come summertime)!

Buttermilk Honey Wheat Bread

Delicious...does need more flour; I add 1/2 C more of wh. wheat. I also add 1 TBLS of vital wheat gluten. I have made it totally in the machine which was good. My preference is to use the dough cycle, put it in my bread pan, let it rise and then bake it in the oven for 25-30min. at 350 degrees.

Classic Gingerbread Cutouts

We made these yesterday in a WI blizzard. Wow and Yum! We like g.bread though while it's not usually our 1st choice, we had enough time to make a batch and these were disappearing while we were decorating. I didn't have any problem with them being crunchy, in fact, they were nice and moist. Not too spicy, a mellow flavor but the spice could be upped if you like it that way.

P.J.'s Fresh Corn Salad

This is fabulous! I used Italian Dressing Mix by Debby from this site (set overnight to marry the flavors 1st). Great way to use garden fresh veggies especially the best local sweet corn that I can't get enough of! This is not something I would typically make which is EXACTLY why I decided to try it and I am SO glad I did! I cut the recipe in half and this made the perfect amount for my family. This is a keeper, thanks for expanding my horizons!

Simple Garlic and Basil Pesto

Easy and fabulous! I didn't have Brazil nuts on hand so I added a few walnuts instead. I grew basil in the garden this year so I could have homemade pesto in the freezer into the colder months!

Pesto Cheesy Chicken Rolls

I loved this recipe; easy and delicious. Made it with the simple and easy garlic and basil recipe from this site using basil bursting from my garden. I will make this again and may try the breading some suggested or top off with more cheese.

Lemon Cream Cheese Frosting

We loved this! I halved the recipe and it used it to top sugar cookies with strawberries, blueberries, and pineapple for individual fruit pizzas. It was very good and I can't wait to try this on a cake recipe. I will make this again!

Hot Fudge Sauce II

We really enjoy this sauce! I use cocoa powder and canola oil instead of the baking squares and a little less cream. I've also made it with the fat free half and half vs. the cream. It turned out great!

Cinnamon Pumpkin Waffles

These were really good. Made per the recipe but saved the nuts to put on top for those that wanted them. In addition to the nuts, we served these with real whipping cream and real maple syrup. It was a great way to use up some of the pumpkin I had left in the freezer. Thanks!

Simple Whole Wheat Bread

I was so intimidated to make bread from scratch when my bread machine broke but this was quite easy. And most importantly, DELICIOUS! I'm going back to homemade bread from now on. Can't wait to play with this recipe some more by trying the cinn. raisin as a reviewer suggested and adding some flax etc. Made as the recipe suggested with the addition of vital gluten. Thanks so much for making me a bread maker again :)
