Fettuccine with Sweet Pepper-Cayenne Sauce

Very good! Hubby said it was a keeper. It was spicy which we liked, but if you don't you may want to use less cayenne.

Perfect St. Patrick's Day Cake

Wow, this was great! We preferred ours the next day after it sat in the refrigerator overnight. I did double the frosting since I planned to make 2 cakes instead of one cake with 2 layers but then I had leftovers (not necessarily a bad thing). I would recommend 1 1/2 recipes; this would be enough to easily cover both cakes but not have a lot left over. The cake was very moist and absolutely delicious! I will be making this again!

Chocolate Pretzels

Easy and very addicting because they are delicious! I use the waffle pretzels, I think this gives a good balance of salt/sweet as there is a bit more pretzel with these vs. the circular. They are great to package up in little baggies/wrap to give as gifts. We will be making these with the preschoolers at my school for our preschool Christmas program to serve.

Toasted Pumpkin Seeds with Sugar and Spice

Although I will eat roasted pumpkin seeds, I am not usually a big enough fan that I go to the effort of making them as easy as they are (especially when my chickens enjoy them as they are). Well, I decided to try these with my family and then make them with them with the preschoolers I teach if they turned out well. I am glad I did; these were terrific! They reminded me of kettle corn with pumpkin spice and it worked very well! I am now a big fan of toasted pumpkin seeds and I know several others that now are too. I will make these each year when making my pie pumpkins and/or when carving pumpkins. I too used less sugar (cut down by 2 TBLS.) and it was plenty. Thank you for a great recipe!

Jalapeno Strawberry Jam

Very, very good! My batch gave me 9 jars from the recipe so you may want to plan to have an extra jar, lid & ring ready just in case. The strawberries I used were sweet, so I only ended up using 6 cups sugar and I was hoping this wouldn't result in a set failure; it did not (whew!). Even with less sugar, it resulted in a "mild" pepper jam. I can't wait to give a jar to my brother; he will love this!

Sunday Morning Lemon Poppy Seed Pancakes

Very delicious! A nice change from your regular pancakes. These would be nice to prepare for overnight guests. I paired it with Blueberry Breakfast Sauce by Ellen on this site. I doubled both recipes (in the sauce I do not double the water, we like it thick). My husband tried a bit of one pancake with pure maple syrup and he said the flavors didn't work well together, definitely do the blueberry sauce! I too used fresh lemon juice as called for and in place of the vinegar and used the zest. It gave them a nice subtle flavor. My son loves lemon and he was in heaven! When he saw the title of the recipe, he suggested that we make these on any day of the week, not just Sunday mornings! I will make them again and I may add more poppy seeds next time.

Awesome Egg Salad with a Kick

If you LOVE horseradish, this is for you. My hubby does and he enjoyed this; in fact, he said it was probably the best egg salad he's had. BUT, I only added 1/2 of the horseradish and I could hardly eat it, it was too strong for me. After a day or two it mellowed out and then I too could eat it and enjoy it. I can't imagine eating it right away with the full amount, nor could my hubby. So, I would recommend either making this ahead and/or reducing the horseradish. We enoyed the bacon addition! This makes a lot so you may want to 1/2 the recipe if you aren't feeding a family.

Cookie Dough Hummus

This was fun to try; something different. I was really hoping my kids would love it as I like to give them variety in their lunch boxes. It was alright but probably not something they would be bragging to their friends about having; tho' the name alone might fool them :). We preferred it the most on a wrap with banana slices.

Pumpkin Flax Quickbread

This was really good! It had a different texture then other pumpkin quickbreads but I guessed that it might. It was good right away but great the next day, in fact we thought it just kept getting better! Because it is more dense, it was hard to tell if it was done. I baked the loaf for 65 minutes and my tester came out clean but the top of the center pieces were a bit doughy so next time I will bake longer. I doubled the recipe and made 1/2 into muffins and used the other half for a loaf. I used a lg. can of pumpkin puree and reduced the sugar per other reviews. Thank you for the recipe!

Vegetable Dill Dip

This review is for the "base" as I didn't have the specific seasoning. I did divide the rest of the ingredients and added 1 of 4 seasoning blends I had on hand in each. This was to answer my own question of which I preferred. I used Penzey's 4/S, Pampered Chef Seasoning Salt, Morton's Seasoning Salt and Old Bay (reduced sodium). I couldn't pick one, they all tasted awesome. The kids devoured their raw carrots with the dip and asked to take the combo in their school lunch. I did reduce the mayo a bit; I usually prefer a higher sour cream to mayo ratio. Simple with natural ingredients, just the way I like it!

Stuffed Shells I

Unanimous, 5 stars from the whole crew! I added fresh spinach (as is without cooking 1st) in the filling, which worked fine. To stuff the shells, I used a cookie scoop so I didn't need to toss a plastic bag. This worked well. Was it still a bit messy? Sure, but it really helped. I ran out of filling which may have been my fault as I filled them quite full. Next time I will stick with 1 box of shells which is 12 oz. instead of using 16 oz.. I did as another reviewer suggested and cooked the pasta for 2 1/2 minutes less than the directions. Great idea! The shells held up well during stuffing and were just right when it came time to eat them. I used Kay's Spaghetti and Lasagna Sauce from this site, which I highly recommend especially for those of you missing meat in the dish, as it is in the sauce. My husband suggested I make this the next time we have company over; now that's a good sign!

Kay's Spaghetti and Lasagna Sauce

This was very good! I only had red pepper so I used that and added some chopped carrots too. Per another reviewer, I did not add the sugar but added a bit of baking soda and I added 1/2 teaspoon red pepper flakes, which we thought was the perfect amount. I don't see a need for the sugar. Using canned tomatoes from last year's garden, I did add a small can of tomato paste (as they seem to be more "watery" than the canned ones in the store). I used this sauce for Stuffed Shells I on this site...wow, great combination!

Cheese Ravioli with Three Pepper Topping

Delicious! Used about 1/2 C. less of the broth and sprinkled with shredded parmesan cheese prior to serving. This would be a perfect compliment to many main dishes. Thank you, I will definitely make this again!

Mocha Chocolate Chip Banana Muffins

I did make some changes per other reviewer's recommendations including use of oil & applesauce vs. margarine, subbed part of the flour for whole wheat pastry flour and I upped the instant coffee & water. I used Ghirardelli bittersweet chips. I melted about 1/4 of them with the coffee & water mixture and used the remaining chips in the batter as the recipe states. My whole family loved these, even the kids! I do like the way you can make your personal preferences to the recipe to make it your own. Thank you, I will use this recipe again.

Applesauce Oat Cake

This a review for the cake...(I used Cream Cheese II frosting + 1 1/2 teaspoons apple pie spice to frost). This was a very good cake, easy and moist! I did add 3/4 cup of raisins (soaked in hot water for 10 minutes 1st and then drained), but this cake is great without; I will definitely make this again! I like that it is a "small" cake so we don't have so much sitting around waiting to be eaten up :)

Soft Onion Sandwich Rolls

These were wonderfully soft and delicious. I do not think they were overly onion flavored and they were great for sandwiches! The whole family, including my kids, loved them! Made as is except used sauteed onions, I put all of them inside the dough. I topped some with sesame seeds and some with poppy seeds. My husband couldn't believe I made them and they were so easy!

Peanut Butter Oatmeal Cookies

My family really enjoyed these cookies! My husband loves oatmeal cookies and I wasn't sure how he would like peanut butter/oat combo but he really, really liked it (said they were one of the best he's had)! I used butter (just don't use shortening) and all natural peanut butter. My son wanted me to add raisins per suggested by other reviewers and I was happy with that addition. I think they would be great without too. No one had any idea that these have whole wheat flour :) I made the dough; baked one dozen and individually froze the other 2 dozen. I have since pulled out a dozen to bake when needed and they turned out well! Great way to resist eating too many in one sitting!

Chicken Enchiladas I

These were very tasty! I am giving the 4 stars as they would have been too watery if I had made them as written. I followed the advice of reducing the tomato sauce (less than 1/2 of the can) and I substituted salsa for the water. For those that wanted more "kick", I topped theirs with pepper jack cheese. Some of us chose to eat these on top of a bed of chopped romaine. I used the Red Enchilada Sauce (by Sal) from this site per another reviewer's recommendation. We will make these again!

Bread Machine Pizza Dough

Absolutely delicious! The texture was perfect! I used this dough for the Chicken Pesto Pizza with Roasted Red Peppers and Asparagus by Mealtime.org on this site. I took the advice of putting the crust in by itself for 5 minutes, then add the toppings and put it back in the oven to finish it. I was glad I did as the very center was a touch doughy. Next time I may pull it off of the pan and put directly on the rack for a few minutes...but the pizza I was making was pretty thick with all of the toppings so this is not the fault of the recipe, more what I chose to do with it :) Oh, and I inadvertently used bread flour but that worked for me. Thanks for a great bread machine dough!
