Tofu Parmigiana

This was really good! I took the suggestion of dipping the tofu in flour, then egg, then bread crumbs. I always freeze and thaw my tofu before cooking because it gives it a firmer texture!

Fast and Easy Tofu Lo-Mein

Pretty good although I didn't really stick to the recipe. I used sesame oil vs. olive oil. Intead of the seasoning packet I used soy sauce (3 T), ginger (3 T), garlic (2 cloves), rice wine vinegar (2 T), honey (3 T), and green onions. Made a very yummy sweet sauce.

Hearty Ham Casserole

Hubby and I gave this 3 stars. It was just okay. I added some garlic powder as well as crispy french onions to the mix and then with the cheese topping later and that helped. My husband said they would love it at his firehouse since it's a "cracker barrel" kind of dish. Thanks for the recipe :) Might try making another time with broccoli instead of corn.

Italian Spaghetti Sauce with Meatballs

I made these with my sister for our Italian Christmas Eve feast. They were delicious and very close to my grndma's recipe. I am giving this 4 stars rather than 5 because i made the first batch with lean ground beef and found them to be kind of tough. I made the next 2 batches with 80/20 ground beef and they were much more tender. THis does not affect the rating bc it was my modification but we added both minced 1/2 an onion and 1/4 milk to each batch which made them a little mushy. I would use one or the other next time to avoid this texture. I used traditional Prego sauce instead of making our own (family preference) and they were a hit! Thanks!!!

After-Thanksgiving Turkey Soup

I didn't save my turkey carcass so I just used broth instead. It was a bit salty so i would probably not use so much next time or use low sodium broth. My husband loved it!

'No Beer Available' Bratwurst

I thought this was pretty tasty. I cut the gingerale in half and added water for the rest since someone said it tasted too much like the gingerale. I put them under the broiler for 5 mins to get the casing crispy!

Creamy Smoked Salmon Pasta

Delicious--husband and I both loved it! Not too salty and coated the pasta wonderfully. I substituted asparagus for peas since that's what we had on hand and used a whole onion instead of half. YUMMY!
