Extra Easy Hummus

This was pretty good. I subbed sesame oil for olive oil, added paprika, cayenne, and halfed the cumin/doubled the garlic as suggested. Yum! thanks for sharing.

Beer Margaritas

These were a bit hit at my BBQ! I subbed sprite zero for the water. I also topped each drink off with some sprite to take the edge off (they were STRONG before I did that!).

Feta Chicken

Mexican Lasagna

This was pretty good. I used whole wheat flour tortillas and added black beans to the first layer of shells. I also chopped up an onion and browned it with the meat. I thought it was a bit bland but next time I'll add pepper jack cheese or some jalapenos to kick it up!

Chicken Milano

THIS WAS DELICIOUS! Thank you for sharing. Used boneless skinless chicken thighs and sliced them up before cooking to save time. Also added some fresh spinach and sauteed in the drippings/broth. Served over whole wheat penne! Will definitely be making again.

Ground Turkey Casserole

I thought this was a very good dish--great comfort food! I used ground chicken because it was on sale and also used lite sour cream, cream cheese, and chedder (not fat-free!). I would suggest softening the cream cheese first in the microwave before mixing with the sour cream. Husband liked it too (although he added hot sauce!). Thanks!!!

Baked Scallops

This was AWESOME! Savory and buttery on the bottom and crunchy and flavorful on the top! I added a lb of shrimp and doubled it. I mixed the garlic with the butter to prevent it from clumping with the dry ingredients and used panko!!! YUM! Thanks for sharing.

Absolutely amazing! took it to a baby shower and it got devoured!!! A quick tip...you can just hand press the dough rather than rolling it to save time. Thanks for sharing!!!

3-Cheese Mostaccioli Bolognese

This was really good! Thanks for sharing. I made a few minor changes based on what I had on hand. Used a minced onion instead of zucchini and sauteed with garlic and olive oil. Browned beef and added a large can of whole tomatoes (roughly chopped). Drained off excess liquid from pan. Then I added ricotta and half of mozzarella. Added 32 oz. of my favorite sauce and mixed in cooked pasta. I added a bit of dried oregano, parsley, basil, garlic salt and onion powder to give it some color and flavor. Lastly I topped with remaining cheese and parmesan. Made a HUGE batch! YUM!!!

Greek Chicken Pasta

Awesome recipe--thanks for sharing! I added a 4 oz can of black olives and also added the juice from the marinated artichokes. Didn't have red onion but yellow worked just fine! I served with couscous on the side instead because I didn't feel like pasta. I let the sauce thicken for about 20 minutes after I removed it from the heat.

Bow Ties with Sausage, Tomatoes and Cream

This was delish--thanks for sharing!!! I found it to be the exact amt of spiciness for me and my hubby (actually my 2.5 yr old didn't mind the spice either!). I used light cream since that was what I had on hand and it was still great.

BBQ Chicken Calzones

These were very good but I didn't have fresh cilantro and that may have made the difference between 4 and 5 stars (not the submitters fault of course!). I found I needed extra BBQ sauce (Sweet Baby Ray's of course) as the crust was a little bready for my tastes. I had leftover filling and it was great by itself! Thanks!!!

Cheddar Baked Chicken

I made this the other night for my in-laws and husband, all of whom raved about it! I will either pound the chicken or slice it thinner next time because I had to cook it longer and it tasted a tiny bit dry to me (my fault though because the chicken breasts were too thick). Thanks for the recipe!

Gazpacho

This was pretty tasty although I made some modifications. I didn't have tomato juice (but had lots of extra tomatoes) so I subbed 4 cups of tomatoes in their own juices. I added two ribs of celery. I also like it chunkier so I did not blend the cucumbers or tomatoes and just blended the rest of the ingredients before mixing together. I did not have tarragon so I used cilantro!. Great with avocado and with pita chips!

Classic Macaroni Salad
