Big Soft Ginger Cookies

I love ginger cookies and liked that molasses was added to this batter, too. These were very good and soft but came out flatter than the picture. I did not use margarine, I used butter but that shouldn't have affected them. I'm in high altitude and didn't see any specific directions. Maybe I need to research that.

No-Knead Artisan Style Bread

Wonderful! Could not find fresh thyme or sage at the store so used 3 teaspoons fresh rosemary, added fresh cracked pepper, kalamata olives and 1 cup wheat flour, 2 cups white flour. Loved the crustiness. Will certainly make again! Just have to plan ahead as it takes 18-24 hours to sit.

Colossal Cookies

Probably should have read the reviews/recommendations first. Loved the idea of chocolate chip/oats/peanut butter but mine came out flat and I struggled to get them off the cookie sheet. We live in high altitude and I thought maybe this recipe wasn't adjusted for that. I had no idea what to do, decided to add about 1/2 cup flour to the batter, make them smaller-maybe walnut sized, not flatten them and bake 8 3/4" minutes. They're better. I'm a soft cookie person so these adjustments seemed to help. I also did spray my cookie sheet.

Irish Cream Bundt Cake

Very good. Made this with my homemade irish cream liqueur. Reminds me of Bacardi's rum cake, very similiar. A hit at the office. Very moist. Just the right bit of irish cream, not overpowering.

No Bake Chocolate Oat Bars

Very addictive and delicious! Easy to make, most ingredients are already on hand. My daughters and co-workers love it! The last time I cut the butter down to 1 1/2 cups and it was delicious!

Irish Cream Chocolate Cheesecake

I made this for people at work. I thought you could add more irish cream liqueur but people I worked with said they could taste it. A co-worker has a recipe that doesn't use the cocoa but mini chocolate chips.

Pina Colada Cake II

Pretty fantabulous. I layered a can of crushed pineapple on top of the pina colada/condensed milk layer. I see other recommendations for pineapple cake mix, that sounds good, too! Quite the hit-how could it not be good?
