Braised Balsamic Chicken

Reviewed: Feb. 23, 2012
YUM! This was so good! I did add mushrooms after I added the tomatoes and instead of garlic salt I chopped fresh garlic instead (about 3 cloves). I had a box of quick parm pasta and this was great! It reminds me of a Lean Cuisine meal that I love, but have never been able to duplicate. Thanks so much for sharing! This will be a keeper!

Mexican Pork Chops

Reviewed: Jan. 18, 2012
As written I had uncooked rice and undone pork...so that would be a "no star", but after I transferred the rice mixture into a fry pan and added the pork chops on top it was amazing! I doubled the recipe and used 8 thin sliced boneless chops. I used about 1 1/2 c rice (again...I doubled) as suggested by previous reviewers. I also did not have chilis, but did have Rotel so I used that instead. I will absolutely be making this again, but I will not waste my time in the oven and instead just dump all ingredients together and place meat on top in a large fry pan on low/medium heat to simmer until done. This was a GREAT starting point and I appreciate you sharing such wonderful ideas! This will be a go-to.

Great Easy Waffles

Reviewed: Sep. 30, 2011
YUUUUUM!! I used 1/2 all purpose white flour and 1/2 all purpose wheat and these were delicious! I didn't have lemon zest, but these were great. I've never used a recipe where I have had to seperate an egg and was a little intimidated, but as everyone else said...worth it! I will definitely be using this as my go to waffle recipe.

Good Old Fashioned Pancakes

Reviewed: Aug. 1, 2011
Yum! Super fluffy and delicious. I used 1/4 c of whole wheat flour in place of regular all purpose and it turned out great. It's also great for add-ins: fruit, chocolate chips, nuts, etc. This will become my go to pancake recipe.

Brown Sugar Shortbread

Reviewed: Jul. 28, 2011
I didn't think there was any way that 3 ingredients would be adaquate to make these as wonderful as I wanted them to be, but I was wrong! These were fantastic and satisfied my craving and NEED for amazing shortbread. These are addictive, though...beware!

Blueberry Buckle

Reviewed: Mar. 20, 2011
I had never heard of a "buckle" before, but when looking for a "pastry-type" dessert to make came across this. WOW! I am a believer! I actually made this exactly as written with only one change. I used whole wheat flour instead of AP and it was fantastic! Thank you so much for sharing!

Creamy Chicken on Linguine

Reviewed: Oct. 19, 2009
This is exactly what I was looking for...creamy and delicious. I did not have heavy cream so I substituted whole milk and butter and it turned out fantastic. The sauce was a bit runny at first, but thickened up. I also added basil and used penne pasta b/c that's what I had on hand. It was really tasty. The next day the leftovers were even better!

Curried Honey Mustard Chicken

Reviewed: Jul. 13, 2009
Really, really good and very easy. I did not marinate the chicken and used chicken thighs because that's what I had. I followed advice from another review to broil for 5-7 minutes prior to cooking for the rest of the time. I also added mini yellow bell peppers and their sweetness was a perfect match. I think that it would also work well to add golden raisins - similar to Indian cooking. Very tasty and I will definitely make this again.
