Authentic Louisiana Red Beans and Rice

I found this a very easy, affordable, and tasty recipe with just the right amount of spice. I followed the recipe exactly but used andouille chicken sausage (a bit milder than the one I normally can find) and the cajun spice mix from this site (leaving out the optional red pepper flakes). Like many others, I served this with a side of cornbread. I will definitely make it again.

Split Pea Soup

Because the meat counter at my grocery store didn't have a ham bone, I incorporated changes by other reviewers to give the soup more flavor that would be missing without the bone. I sauteed the onions with 2-3 cloves garlic in a little olive oil before simmering with peas. I then added 2 quarts of low-sodium low-fat chicken broth and the peas, and added a bay leaf with the marjoram and the pepper, but skipped the salt because of the broth. I bought a ham steak and didn't want it to dry out, so I didn't add it until the rest of the vegetables went in. The soup was very thick by the end, but easy to thin out in individual bowls (I ran out of chicken broth so I used hot water, but there was no loss of flavor). I also saw that some people removed the ham and blended the soup before putting the ham back in, but we tried it first and liked the texture the way it was. I love split pea soup and this was a great and easy recipe. I can't wait to try it as intended with the bone.

Grilled Mahi Mahi with Roasted Pepper Sauce and Cilantro Pesto

Didn't change a thing and it was awesome. My boyfriend and I grilled the mahi mahi in a grill pan, and served it with roasted baby red potatoes with margarine and rosemary, and with grilled asparagus (brushed with olive oil, sprinkled with salt and pepper, and then kept warm in the oven, with a little shredded parmesan cheese on top and covered while the fish cooked). Pretty and delicious!

Shredded Chicken Tacos

My boyfriend and I made this tonight (with Southwestern Rice on the side, also from this website). It was really easy and it came out pretty good, but we both wished there was more of a kick. We used chili powder instead of ancho chile, thinking it wouldn't make a difference. Next time, we'll see if ancho is spicier, and we'll probably add more adobo (we used about a tsp, unsure of how much to put in). We also used boneless chicken, and that worked just fine.

Southwestern Rice

My boyfriend and I made this tonight with the Shredded Chicken Tacos also from this website. We accidentally used a 14.5 oz can of diced tomatoes with green chiles and jalapenos... We also used a 10 oz can of Mexicorn instead of frozen corn, and we doubled the turmeric. It was a bit spicy but really good! I thought it was too spicy at first but then couldn't stop eating it =) ... Thanks for the recipe!

Spinach Basil Pasta Salad

I thought this was a great base recipe! The original recipe looks really good but I was on a budget and I didn't have prosciutto, pine nuts, or enough parmesan on hand, so I did make changes. My version came out good, so I figured I would share for those who want a vegetarian option. I didn't have bow tie pasta, so I used Barilla whole grain rotini. I used a 9 ounce package of spinach and I added 2 cloves of garlic. I skipped the prosciutto, salt and pepper, pine nuts, and the parmesan. Instead, I added a can of chickpeas (rinsed), a can of black olives (rinsed), and 1 cup of Athenos tomato basil feta for a salty flavor. I followed the cooking directions and it came out really great. I'm excited to try the original next time!

Avocado Fish Tacos

This sounds so delicious, but I didn't want to have so many calories in just one taco... so I followed the recipe except I grilled the fish instead of frying and I subbed 1/2 cup of salsa for the dressing. I also used an extremely small amount of salt, just to season the fish before grilling (along with pepper). I The avocados drenched in lime were so good, and really made the whole meal. Thanks for a great base recipe!
