Spanish Flan

I've been using this recipe for about 4 years now! Never fails to impress. I always had to make 2 for my family, and have started making 3 now because of how much everyone loves it. The only thing I do differently is only add in half a tsp of vanilla (I found 1 tbsp to be too overpowering). I also bake in a water bath uncovered for an hour, and let it cool overnight in the fridge. Sometimes I'll add lemon juice to the sugar, and sometimes I forget. The lemon juice makes the sugar more liquidy and without any lumps. But the lumps always melt in the oven anyways.

Chunky Potato Soup

Great recipe! I didn't have Swiss cheese so I threw in a slice of American cheese and it came out fantastic. I ate this with a slice of garlic bread. Yum!

Zesty Tilapia with Mushrooms

Really good, but I made some adjustments. I first sauteed the mushrooms with some onions in a little bit of oil. While that was sauteing, I took two tablespoons of butter and 3 tablespoons of lemon juice and some cilantro and put that together in a bowl and melted it in a microwave, and then took the mushrooms out of the skillet and put the melted butter cilantro lemon juice into there, and then put the tilapia in with it. After I flipped the tilapia, I put the mushrooms back in and put the green onions.

Creamy Caramel Flan

It was really good, I had to make it for my Spanish class at school. Mostly everyone liked it, but one of the problems was that I let the sugar cook for too long so it became too dark and tasted a little bitter. So you have to make sure to not overcook the sugar. It's also important to have the water bath because I made it once without it and it turned out to become a disaster.

Gobi Aloo (Indian Style Cauliflower with Potatoes)

Excellent recipe! I did add about a cup of coconut milk with the potatoes along with one chopped tomato. Without the coconut milk, the potatoes would have stuck to the pan and would have gotten burned, but the coconut milk added great flavor. I also added some dried red chilies for extra spice and flavor.
