Mom's Baked Beans II

So good! As I am a vegetarian, I left out the bacon and it turned our so yummy! This is really a great recipe. A tip for vegetarians is to use crispy fried onions bought in the asian section of the supermarket and sprinkle on top of the beans when ready. This is always what I use instead of bacon.

Apple Crisp IV

This recipe is so simple and easy. My boyfriend loves it and I find myself making this for him once a month. It is so homey tasting and not too swet. Perfect!

Whipped Shortbread Cookies

The taste is 'melt in your mouth' good but they turned out so flat and thin that even when they cooled, I can't pick them up! They break into tiny (deliscious) pieces! Not sure how you all made such thick and rounded cookies as the above pictures!

The Best Lemon Bars

I found this to be a nice bar but thought the "crust to filling" ratio was unbalanced. Next time, I will either cut crust in half or double the filling. I added more lemon (3 lemons), and zest of 2 lemons. I added 1.5 table spoons more flour and 8 more minutes in the oven. I thought it worked well. The addition of whipped cream on the side was a nice combination with the tart bursts. Yum.

Double Layer Pumpkin Cheesecake

Super easy! I found that one cup of plain cheese cake on the crust bottom was not enough to have a balanced layered look. I think at least 1.5 of plain cheese cake is needed if you are looking for the half/half look. Taste is creamy and smooth, not dense. Still prefer just a plain pumpkin pie but can't fault this cake for what it is, just a cake that tastes nice, looks nice and is easy!

Pebber Nodder (Danish Christmas Cookies)

Super easy and great texture! I added white pepper and mace. I also rolled into tiny balls and then dipped them in white powdered sugar after taking out of the oven. The quanitity was not 100 but still very impressive.

Blueberry Muffins I

I liked these becasue they were a dry muffin, not cakey. THey baked beautifully, very pretty when done but the muffin is a vehicle to show off the berry. Do not expect an amazing taste, but rather a drier and less sweet muffin, perfect served with butter. Because it is dry and less sweet we all enjoyed it very much. I used baby kiwin instead of blueberries. I am guessign that raspberries would be fantastic!

Cherry Cheesecake Dessert

I doubled this but found that it took even more time to cook into the centre. It was an easy recipe but I was looking for more of a dry and crumbled cake. This cake is good if you are looking for soft and velvety.
