I "survive" winter and wait for summer so I can enjoy RVing and riding my Harley. I like "home cooked" meals when we are camping to supplement the typical burger and dog diet. Most ovens in campers do not heat evenly (they burn the bottom and never brown the top) so that's always a challenge. I just joined this web site but would like to find some great recipes to try camping this summer. I've done meatball grinders and hot pastrami samdwiches on the grill for lunch up in Laconia at Bike Week and would like to find some nice dinner meals to make this year as I usually wind up feeding some or all of the gang.
My favorite things to cook
I like quick and easy dishes normally but do enjoy a more elaborate meal once in a while. I do a lot with chicken or beef. I love using my crock pots.
My favorite family cooking traditions
I love my Grandmother's home made stuffing for Thanksgiving. She never worte it down, so as a teenager I had to learn by sight. It includes toasting 96 slices of bread. My daughter is 15 and althought she can't make it without some help, she's got a clue of what's in it...
My cooking triumphs
A slow cooker success for lamb shanks that make an otherwise tough cut of meat something that melted in your mouth and was seasoned to perfection.
My cooking tragedies
NEVER PUT BONELESS CHICKEN THIGHS AND PEANUT BUTTER IN A CROCK POT... EVER!!!

Garlic Cheese Chicken Rollups
I read the reviews and tried it; couldn't agree more, this is fabulous! It has a very apealing yet not overwhelming flavor. I also could not find a garlic cheese spread so I used the Philly cream cheese... worked fine!
