About this Cook
Living on a farm in a small rural community ( with no restaurants closeby) cooking became a matter of survival. Raising 3 daughters and working at the local hospital as an RN for 30 years...quick meals after work were a necessity.
My favorite things to cook
yeast breads, pies/cakes, soups, and all the traditional comfort foods including home cranked homemade ice cream.

Country Pumpkin Muffins
Used a whole 15 oz. can of pumpkin. Made some mini loaves as well to freeze. Excellent!

Fudgy Cream Cheese Tunnel Cake
Delicious every time. Stack fresh strawberries with stems in the center for a beautiful presentation.

Cottage Cheese Pancakes
Wonderful easy recipe. I added 1 tsp vanilla to batter for a little zip and used Mrs. Butterworth's sugar free syrup. Thanks Jennifer!
