Goat Cheese and Spinach Turkey Burgers

I used basil and tomato feta cheese instead of the goat cheese and it was delish! I put them in a pita pocket with some red pepper hummus. Yum. Very easy, will make this again

Flounder Mediterranean

I made this for a light New Years Eve dinner and it was pretty good. I don't like olives so I didn't use them and I didnt have capers so they were out too. I used a can of diced tomatoes which made this much easier. Also, like another reviewer, I cooked the flounder without the sauce. I squeezed half a lemon over it, seasoned with salt, pepper and a pinch of old bay, added chopped basil and fresh flat leaf parsley before I put it in the oven. Very easy. I might try this again.

Creamy Artichoke Pasta

I really enjoyed this recipe. It was easy and so tasty. I threw in some left over chicken to make it a more hearty meal. I will definitely make this again! And the sauce was so good, even though I used NON-FAT sourcream and cottage cheese. I couldnt believe it was fat free!

Chicken Scampi II

this turned out to be kind of bland. not sure what I did wrong. maybe next time I will use fresh herbs instead of dried ones. And it was way too oily for me. I would cut down on the oil and margarine.

Marinated Grilled Shrimp

I used the George Forman Grill too and it was so easy. The shrimp cooked really fast though. I dont think they even needed three minutes on the GF grill. THis was super easy. It was my first try at cooking shrimp and I would definitely do it again.

Stuffed Peppers

I used ground turkey instead of ground beef and it came out well. I had to cook it for longer than one hour for the meat to be fully cooked. Also, like other reviews, I felt it was a little bland. Next time I will add more spices. Also, I too used more sauce. I covered the dish except for the last 15 minutes and I boiled the peppers for 4 mintues to make the softer. I would definitely try this again though. I liked that I didnt have to brown the meat first. Huge time saver.

Potato Latkes I

I have never made Latkes before but these were a breeze! I used my food processor (I know..kind of cheating) and it was so simple. I also used olive oil instead of peanut oil and they still tasted great. Thanks Rachel!

I had tons of the stuffing left over.. Maybe I didnt buy big enough mushrooms? When I make this again, I will scale back the amounts of the stuffing. Otherwise, yum!
