Sweet, Sticky and Spicy Chicken

DELICIOUS!! I used thighs instead of breasts with yummy results. The instructions are simple and the sauce is exactly as descriped--sweet, sticky and spicy.

Grilled Tilapia with Mango Salsa

The marinade is delicious--salty and crisp. Paired with the semi-sweet mango salsa that has a vibrant tang you this dish is amazing! Even my boyfriend who doesn't like fish wants me to cook this for him. Be sure you get a ripe mango; but if, like me, it isn't quite there, add a little sugar to help it along.

Mother's Banana Bread

Great bread. The baking time was spot on for me because it produced a slightly crisp crust on the bread, but some others might want to check on the loaf 5 or 10 minutes early to avoid that!

American Lasagna

I used the "meatloaf" mixture of ground pork, beef and veal and it made an even tastier version. I recommend draining the diced tomatoes so you have a thick sauce mixture--that way the lasagna isn't watery when baked.

Chicken Cordon Bleu II

I didn't have chicken boullion cubes so I used some Adobo seasoning instead. It turned out great! I highly recommend pounding out the chicken breasts to be thin enough to roll up--better texture and distribution of ham/swiss to chicken.

Peanut Butter Sheet Cake

Great recipe! Perfect for a peanut butter lover. I would recommend using chunky peanut butter in the glaze and putting that on while the cake is still warm to enable easier spreading.

Iced Pumpkin Cookies

With most of these recipes I find I can cut the sugar in half and they still taste great. I did just that for the cookie batter, and then cut the glaze in half and did only a drizzle. I also used half whole wheat flour. Still delicious, and less guilt-inducing! =)

Pumpkin Bread IV

Excellent. Great spices. Nice and moist. Perfectly pumpkin-y. I even followed one of the comment versions and substituted applesauce for oil. My only issue is that now the muffins stick to the paper wrappers--so maybe get foil ones or just grease muffin cups!

Baked Asparagus with Balsamic Butter Sauce

Delicious. I doubled the sauce like most people said and I found I had too much, so I guess it depends on how saucy you like the asparagus, and what you're putting this over. As a side not on rice or another starch I think the sauce as is is fine.

Butternut Squash Soup

I used only have the cream cheese (8oz) and I had no marjoram so I substituted Italian seasoning (oregano and thyme) and it turned out great. A nice kick from the cayenne counteracts the sweetness of the squash and the cream cheese makes it nice and thick.

Perfect. Be sure not to skimp on the powdered sugar, otherwise you end up with all your Chex stuck together. I used the wheat version and they taste just as great, and are a smidge better for you. =)

Zucchini Risotto

Loved loved loved the flavors in this risotto! Do soak the sundried tomatoes in hot water for 20 minutes to soften as suggested--they'll release much better flavor into the risotto. I also used the whole zucchini--much better veggie to starch ratio. Also, before adding in the stock slowly I added 1 cup of sauvignon blanc because I'm a vino.

Molasses Sugar Cookies

Delicious recipe. The cookies didn't flatten out as much as pictured, so maybe I rolled them too large. Not sure what "walnut" sized is, but I made them about 1" in diameter. Maybe I should have pressed the cookies slightly. Regardless, they taste great!

Feta and Bacon Stuffed Chicken with Onion Mashed Potatoes

Amazing! I used garlic and herb flavored feta for an extra kick in the chicken, and it turned out delicious. There was a bit of the feta/bacon mixture left over from stuffing the chicken breasts, which I crumbled on top of some spinach leaves for a complementary salad. Great recipe!

Ian's Potato-Vegetable Soup

Easy and fast--a half hour soup that's filling, tasty and satisfying. I recommend seasoning to taste after, instead of adding the tablespoon of salt in right off the bat. My edits: I had smallish Idaho potatoes so I used 3, and then used 3 cups of water so they were covered. I also added a can of creamed corn and used cream of mushroom soup instead since the store didn't have cream of celery.

Basic Crepes

I would suggest adding the flour to the bowl, adding the eggs, and then whisking AS YOU ADD MILK. The directions as is call for whisking eggs and flour together which only results in a giant glob of dough stuck in your whisk. Other than that these tasted great! I am going to post a lemon/blueberry cheese blintz-type filling that I concocted to go with.
