Feta and Bacon Stuffed Chicken with Onion Mashed Potatoes

Amazing! I used garlic and herb flavored feta for an extra kick in the chicken, and it turned out delicious. There was a bit of the feta/bacon mixture left over from stuffing the chicken breasts, which I crumbled on top of some spinach leaves for a complementary salad. Great recipe!

Crunchy Cabbage Salad

I felt that the ratio of cabbage to other items was off. There seemed to be too much cabbage, so I added the full cup of red and green peppers and almonds.

Sweet, Sticky and Spicy Chicken

DELICIOUS!! I used thighs instead of breasts with yummy results. The instructions are simple and the sauce is exactly as descriped--sweet, sticky and spicy.

Creamy Butternut Squash With Cinnamon Soup

Easy and delicious soup. The most difficult is blending the soup to a smooth consistency. I was able to use my food processor (keeping it below the liquid fill line) to do it in 2 batches. Make this vegan by using vegetable broth and not adding the cream. Instead, add less broth to create the thicker consistency. I chose to garnish with some nutmeg--really brought out the squash!

Summertime Slaw

The vegetables were a great mix, but the dressing...oh my goodness it tasted very oily, hardly any flavor! Boiling the sugar out of the mixture didn't help! I ended up scrapping the dressing and making my own!

Butternut Squash Soup

I used only have the cream cheese (8oz) and I had no marjoram so I substituted Italian seasoning (oregano and thyme) and it turned out great. A nice kick from the cayenne counteracts the sweetness of the squash and the cream cheese makes it nice and thick.

Molasses Sugar Cookies

Delicious recipe. The cookies didn't flatten out as much as pictured, so maybe I rolled them too large. Not sure what "walnut" sized is, but I made them about 1" in diameter. Maybe I should have pressed the cookies slightly. Regardless, they taste great!

Chicken Cordon Bleu II

I didn't have chicken boullion cubes so I used some Adobo seasoning instead. It turned out great! I highly recommend pounding out the chicken breasts to be thin enough to roll up--better texture and distribution of ham/swiss to chicken.

Baked Asparagus with Balsamic Butter Sauce

Delicious. I doubled the sauce like most people said and I found I had too much, so I guess it depends on how saucy you like the asparagus, and what you're putting this over. As a side not on rice or another starch I think the sauce as is is fine.

Butternut Squash Bake

A nice savory side using butternut squash. I find that most recipes call for cinnamon and nutmeg, so I really appreciated this different take. The natural flavor of the squash perfectly compliments the bite of the bleu cheese.

Gourmet Mushroom Risotto

I would have given this 5 stars except the flavor seemed to be missing something, and there were too many mushrooms. I only used a pound and a half and it was too much. I think this recipe needed some garlic, but all in all it did have restaurant quality texture.

American Lasagna

I used the "meatloaf" mixture of ground pork, beef and veal and it made an even tastier version. I recommend draining the diced tomatoes so you have a thick sauce mixture--that way the lasagna isn't watery when baked.

Blueberry Muffins I

The bf loved these. I found them to be a bit lacking in flavor. I added a dash of cinnamon to the top of some of the muffins that was nice, but next time I'll probably add it into the batter. Also, using vegetable oil I felt really dulled out the flavor, so maybe I'll try applesauce instead.

Perfect. Be sure not to skimp on the powdered sugar, otherwise you end up with all your Chex stuck together. I used the wheat version and they taste just as great, and are a smidge better for you. =)

Basic Crepes

I would suggest adding the flour to the bowl, adding the eggs, and then whisking AS YOU ADD MILK. The directions as is call for whisking eggs and flour together which only results in a giant glob of dough stuck in your whisk. Other than that these tasted great! I am going to post a lemon/blueberry cheese blintz-type filling that I concocted to go with.

Banana Bread II

Great bread. The baking time was spot on for me because it produced a slightly crisp crust on the bread, but some others might want to check on the loaf 5 or 10 minutes early to avoid that!
