Lemon Zucchini Muffins

This recipe is just weird. I have never heard of melting butter for a baking recipe. The muffins seemed more like a German kuchen or cake. But not quite. I like the idea of the lemon and zucchini, but the texture was definitely not muffin consistency. Good idea, but gonna keep looking for a more bread like recipe.

Sausage, Potato and Kale Soup

I have made this soup but not from this EXACT recipe. It's pretty much the same, except I added a lot more kale. Like the other reviewer, I wouldn't add the milk/half & half til after the potatoes and kale have cooked. It would curdle and I'm always a clutz on the stove top with boiling (I have a 2 yo, that helps distract me :) Love that I'm getting all the vitamins and yumminess in one bowl! Hubby could have done without the kale, but he also would eat bacon by the pound if he could!

Banana Oat Muffins

These were not great. I've made great oatmeal cake, but you have to cook the oatmeal before you mix it into the batter. I think that would have made these better. Didn't have any brown sugar on hand, but I think that would have also made these better.

Vegetable Rice Pilaf in the Rice Cooker

This was simple and easy... but I would half the rice, double the veggies, and use a tad more liquid than the recipe said to use. We're trying to lower our cholesterol, so the more veggies I can squeeze into our day the better. It went great with the Thai Coconut Soup recipe from Allrecipes. And I was excited to use bok choy for the first time in a recipe. I didn't use the leafy part of it, don't know if you're supposed to or not. Thanks for sharing!

Asian Salad

Used everything but the cabbage (just had regular bag salad on hand). Husband said, "This is the best salad I've ever had," just matter of fact like that. I agree. Great dressing! Added pan seared mushrooms with balsamic vinegar. Recommend making the dressing at least 30 min ahead of time so it can really cool down.

Creamy Frosting

This was the best frosting I've ever made! Thanks to JustMe's posting I was able to follow her directions and make an excellent textured frosting. I made it for carrot cupcakes. *One note* a reviewer suggested using almond extract instead of vanilla. It was tasty, but a little too powerful - suggest using just 1/4 or 1/2 teaspoon of almond extract. Also we didn't like almond extract paired with carrot cake - should have used vanilla. Will definitely make this again, though. Mmmm mmmmm.
