Peanut Butter Balls V

Reviewed: Feb. 21, 2011
This recipe was great! I used a fondue kit to warm up the chocolate which probably is why the chocolate didn't coat very evenly. Next time I would use a double broiler. I would probably also use the full amount of graham cracker crumbs that the recipe called for. From reading the reviews I used 2 cups, next time to get more of a crunch I will use 2 1/2, and probably more nuts. I also used almonds. All in all, good recipe!

Ghirardelli® Classic White Chocolate Creme Brulee

Reviewed: Feb. 20, 2011
This recipe was terrible. The egg curdled. Maybe I baked it for too long, or maybe it scrambled while I mixed the chocolate mix to the egg whites. Regardless, I will probably not try it again.

Spinach Lasagna II

Reviewed: Feb. 13, 2011
This recipe was great. I made a few changes though. I made a vodka vegetable sauce, sauteed onions, then grilled red peppers, mushrooms and zucinni in olive oil. I added a call of crushed tomato's and 1/4 cup of vodka and 1/4 cup of light cream with salt, oregano, basil and garlic. I mixed the ricotta with the spinach (fresh) and 1 egg and 1/2 tsp salt, no cheese. But then when i layered, I put a layer of parm cheese in between the ricotta mix and the sauce. It was excellent.

Old Fashioned Coconut Cream Pie

Reviewed: Jan. 21, 2011
I LOVE this recipe although, I rated it a 5 but the 5 is for the modified version of the recipe. I read all of the reviews and based on them, I replaced the 3 cups of half and half with 1 1/2 half and half and 1 1/2 coconut milk. I also substituted the flour for 1/2 cup of cornstarch. I missed out on the review that said use 1/3 cup, but it still turned out great. I also made my own whipped topping with 1 carton of whipping cream and 1tsp of vanilla. I used 3 1/2 tbsp of icing sugar because on its own it tasted a bit bland. My husband is a huge lover of coconut cream pie and he loved this. I didn't use the microwave but boiled the filling on med heat, constantly stirring and it took about 15 mins or so before it thickened. All in all, great dessert.

Oven-Baked Caramel French Toast

Reviewed: Jan. 20, 2011
I used this recipe's brown sugar icing to serve with traditional french toast. I made my french toast with peanut butter sandwiched inside. With the brown sugar topping it was to die for.

Lemon Squares I

Reviewed: Jan. 20, 2011
This recipe was great, but please read all of the reviews before you make it. I followed the reviewers advice to customize it and it turned out fantastic. I would definitely make this again, but customized.

Empire Cookies

I was not a fan of these cookies. I think the recipe was easy to follow and i thought they were going to taste great but it had a funny taste to it. Not sure what I would do to change it next time.

Gingerbread Cookies I

Reviewed: Dec. 19, 2010
I tried this recipe today (dec 2010) and I have to say that reading the reviews helped a lot. I added 1 more cup of flour but I wish I had added a bit more spices but overall the cookies turned out great. We baked them at 325 for 8-10 mins and they turned out soft and chewy. We waited to add the extra cup of flour and the dough was too sticky. We also waited about 15 - 20 mins before rolling out the dough just from some of the reviews. Overall it was a good recipe.

Avocado Stuffed Yams

Reviewed: Nov. 30, 2010
This recipe was fantastic. I have food sensitivities and this was a great hypoallergenic/gluten free IBS friendly recipe. I read all of the reviews and only used a splash of lemon juice, I added fresh garlic and omitted the cheese and the red pepper. I will definitely be making this again!

Red Velvet Cupcakes

Reviewed: Aug. 28, 2010
I really liked this recipe, the cupcakes turned out great. I didn't love the cream cheese frosting. I felt like the cream cheese was a little overbearing so I made half of them with butter cream icing and it turned out very good. Next time I am going to try to add maybe more sugar to the frosting. If I could get a modified cream cheese frosting recipe I think it would be one of the best cup cake recipes.

Chocolate Covered Strawberries

Reviewed: Aug. 21, 2010
This recipe was great! The only mistake I made was I didn't let them dry on parchment paper and the chocolate froze at the bottom of my dish. But we still enjoyed them once we managed to get them off.

Coconut Cream Cake

Reviewed: Jul. 2, 2010
This cake was great... I took the tip of only poking holes half way through the cake and it turned out great. The only thing that I would change is maybe using 3/4 of the can of the condensed milk. Either that or pour less into the poked holes because parts of the cake was a bit soggy. I would also maybe add fresh whipped topping right before serving with roasted coconut flakes sprinkled on top. Minor tweaks but overall great.

Best White Icing Ever

Reviewed: Mar. 6, 2009
This recipe was GREAT... but I did not follow it to a tee... i used 1/2 tsp almond extract and only 3 cups of the sugar and it tasted wonderful... it was still pretty sweet so I can see how using 4 cups would make it VERY sweet.. highly recommend the almond extract
