Fluffy Boiled Icing
I made this recipe tonight for my son's birthday cupcakes. Cons: I do think the recipe's directions need some clarification. 238 is soft-ball stage and is too hot; I ruined the first batch by following this. I believe maybe they meant to say the icing forms a soft thread in cold water, which is thread stage,about 10 degrees cooler. Also, fyi, this is not a decorating icing; it's a marshmallow-style icing. Pros: I really like the flavor of this icing, and for a marshmallow style icing it has a nice consistency. Making it into chocolate with melted chips is wonderful. Hints: Chill bowl and beater before beating egg whites. This cuts down immensely on time apparently 'cause it didn't take me long at all 'til it was done. Beat 'til knife makes a clean path in the icing. Also, if you're going to make it into chocolate icing, try melting about 1/3 c. chips and adding with the syrup or maybe putting them in the syrup after removed from heat; they'll melt fast. Add later and it will ruin the structure (as I did; oops :), tho the flavor will still be excellent and consistency still spreadable :)

Apple Squares
In all fairness, I was unable to rate this based on the exact recipe as given due to an extreme number of food intolerances in my 10 yo, but with all of the adjustments I did for this, it turned out wonderful! I might tweek it some, but I think it was because of my adjustments, not the original, or it wouldn't have turned out as great as it did! It was devoured in an afternoon! fyi, here were my adjustments: replaced flour with gluten-free mix of flours, replaced baking powder with 1/2 tsp baking soda and 1/4 tsp cream of tartar (corn intol. so no baking powder 'cause it uses cornstarch), replaced butter w/melted palm oil "ethical" veg shortening ('cause dairy intol), and replaced egg with 1 T flax see and 3 T water (egg intol). Also added 3/4 tsp xanthum gum and 1/4 tsp baking soda due to use of gf flours.

Slow Cooker Pulled Pork
This was excellent. I did use a generic form of Dr. Pepper 'cause it was what I had on hand, but that was the only change. The whole family loved it. I do believe the soda gave it extra flavor as well as made it fall apart tender, and, because you drain off the soda at the end, you don't get all of the sugar (and caffeine in this case). Even my incredibly picky 3 yo loved it. fyi, I used jack daniels bbq sauce. thx for the recipe!
