Hash Brown Omelet

Reviewed: Jan. 5, 2010
I didn't realize this was already a submitted recipe until I went searching for ingredients! I make something so similar to this, I just added it here. I double or triple everything, since I'm feeding 5 people. I use turkey bacon. Rather than chopping up onions and peppers, I use the O'Brien shredded hashbrowns with onion and green pepper. And I add a bit of chive on the top to breakfast a bit of flair! A delicious family favorite!

Incredibly Cheesy Turkey Meatloaf

Reviewed: Jan. 4, 2010
This was fantastic! Naturally, I made a few changes. Here's what I did: I used 1 1/2 lbs. of turkey, rather than 2.. just because it fits in my loaf pan better. I used 3/4 c. of crushed butter crackers [instead of bread crumbs], soaked those in 1/2 c. milk. I had to use shredded cheese because it's all I had on hand but I would love to try this with cubed cheese. I used half sharp cheddar, half colby. I added a lot more spices than just s&p. I threw in some oregano, onion powder, garlic powder, chili powder. Mixed all that up together and threw it in my loaf pan. For my glaze, I used Honey BBQ sauce with some brown sugar stirred into it. Baked at 400 for 1 hour and 20 minutes. So, so, so good. Everybody in my family loved this.

Super Easy Fruit Dip

Reviewed: Jan. 4, 2010
I think I've found the fruit dip I'll be making from now on. Like others, I was bored with cream cheese or marshmallow creme based fruit dip recipes. The only thing I did differently was use 2 containers of yogurt, rather than 1. I used Yoplait's Blueberry and Yoplait's French Vanilla. So, so, so good. Served it up at my son's birthday party and everyone thought it was delicious! Great and simple recipe!

Sausage Casserole

Reviewed: Jan. 1, 2010
I followed suit and set my oven to 350 degrees. I used maple flavored sausage, rather than sage because it was on sale. I used the Ore Ida O'Brien hashbrowns with peppers and onions, pre-cooked that for 30 minutes. I cooked my sausage and onion together, added about 1/2 tsp. of oregano to the mixture. I used half mild cheddar cheese, half colby and monterey jack. I'm sure this is a great recipe as is but I always have to put my own tweak on things and this is a great one to do it to, so many variations possible. Superb! Everybody in my house loved it, even my picky 5 year old daughter.

Baked Macaroni and Cheese III

Reviewed: Apr. 9, 2009
Ok, so I've reviewed this before but brought it back out and made some changes. Here's what I did: I used shells instead of elbow noodles because it's what I had on hand. I used 1/2 c. of coffee creamer, instead of evaporated milk; like half n' half only richer. I used half cheddar cheese, half colby jack cheese. Rather than just salt and pepper, I added 1/2 tsp. chili powder, 1/2 tsp. onion powder, and 1/2 tsp. garlic powder. Again, as I stated in my previous review, I used about 4 T. of butter. Except for the Parmesan and butter, I mixed everything together in a big bowl THEN put it in the greased baking dish. I sprinkled oodles of Parmesan cheese on top, then poured my butter over that. Also, I covered the dish with aluminum foil before putting it in the oven. This keeps it from drying out. Maybe this is a given but the recipe doesn't say to do that.

Mom's Best Meatloaf

Reviewed: Mar. 9, 2009
I was so excited about this recipe because of all the rave reviews, so I followed the recipe exactly and was mildly disappointed. It was alright but nothing spectacular. My children gobbled it right up. My boyfriend ate it but wasn't overly impressed. I'll be looking for another meatloaf recipe. Thanks anyway!

Pumpkin Bread VI

Reviewed: Mar. 9, 2009
Great recipe. I didn't use wheat flour because I only had all-purpose flour on hand. I didn't have all spice or nutmeg either.. so I just used cinnamon. Still, this bread was scrumptious! Very moist and smelled delightful. My family didn't get to eat much of it because I couldn't keep myself from snacking on it throughout the day!

Linda's Lasagna

Reviewed: Mar. 9, 2009
This was my first time making lasagna and I was extremely pleased. The only thing I left out was the onions [not a huge fan] but other than that, I followed the recipe to the T and it was delicious. Even my boyfriend, who swore no one could beat his mom's lasagna, has changed his tune. Great recipe!

Bran Flakes Muffins with Raisins

Reviewed: Mar. 9, 2009
I read other reviews first and followed suit, using half the salt and halving the baking time. I used plain bran flakes because I'm not a big fan of raisins. I also crushed the flakes, added 1/2 cup of blueberries, 2 Tbsp. of honey, and about 1/4 cup more milk [I think this was due to letting the cereal sit for so long to soak up the milk], topped them with some oats and they were absolutely delicious. My boyfriend and kids loved them.. very moist. This one's a keeper!

Nanna's Banana Bread

Reviewed: Mar. 9, 2009
This is, by far, the best banana bread I've ever made. I followed the recipe exactly.. only omitting the walnuts. My kids despise them! I gave it 4 stars, just in case there's a better recipe out there.. but I'll definitely be sharing this one with my family!
