Caramelized Butternut Squash Soup

Loved this - the hardest part was peeling the butternut squash. The rest was a total breeze and it came out absolutely perfect. A little sweet and a little savory. I definitely recommend this - even if you aren't an onion fan.

As is, the recipe is just OK. The water that it called for was way too much, so I ended up draining it out and adding back a tiny bit while mashing. Else it would have been extremely runny. I added more cinnamon as well - personal preference.

Beef Stew with Roasted Winter Vegetables

This was actually pretty incredible. Everything I used was organic, from the meat to the vegetables. I used carrots, sweet potato, and butternut squash. The only thing I did differently is add way more spices since I know I prefer a punchier palette and used cubed beef stew meat instead of sirloin. Super comforting and super filling. LOVED IT.

BBQ Chuck Roast

I made this recipe exactly except I cooked it in the oven at 325 degrees for 2.25 hours. (I also dredged it in flour and browned the sides first) I was nervous at first because the marinade tasted icky when I sampled it. However, this was THE BEST roast I have ever had. It was so unbelievably tender and flavorful. It was almost liked pulled pork!!

Easy Chicken Rice Casserole

It was just OK - after about an hour everything got super dry. Good thing I didn't cook it for 90 minutes... also glad I added some extra seasoning or it would have been a little bland. Next time I will add more liquid and cook it for about 45 minutes. I added sage which really brought out the flavor of the chicken.

Vegetarian Bean Curry

I'm a huge fan. Recipe definitely comes out better if you cook the lentils a head of time or you'll be going through gallons of vegetable broth to cook 'em up.

Cream of Mushroom Soup I

Outstanding recipe - all i used was white wine instead of sherry and a little garlic to change the recipe. My only complaint is that one serving is about a cup, which wasn't enough for us vegetarians. If this is your main course, you will want to double up.

Elegant Mushroom Soup

Best egg salad I've ever had, hands down. I stuck extremely close to the original recipe only adding a tiny bit of honey to yellow mustard because I didn't have Dijon.

Gourmet Mushroom Risotto

This was amazing; the husband who just thinks mushrooms are okay ate this with gusto. I did however make a few minor adjustments but I don't think they made or broke the recipe: I'm a vegetarian so I used vegetable broth and I added a 1/2 cup more rice.

A good base, but I added reduced fat fiesta blend cheese, light sour cream, olives and tomatoes. I thought it was awesome. I'm not sure I would have thought so with the original alone, but definitely a keeper.

The Best Unbaked Cherry Cheesecake Ever

Taste was definitely a 5 - a fantastic recipe. However, cutting the cheesecake was pretty messy business and the presentation was a little unimpressive. I had to scoop it out.

Italian Spaghetti Sauce with Meatballs

There was a ton of oil from the meatballs even though it was a lean cut. I had to spoon it out with a ladel. I also thought the sauce was too tart. Granted, the meatballs were pretty good, but overall nothing really exciting.
