Cream Soup Base

Reviewed: Feb. 2, 2010
This recipe was easy and quick. I added 4 fresh heads of steamed, chopped broccoli along with sharp cheddar cheese (about 3 cups). I had to add about 2 more cups of milk due to the large amount of broccoli, but in the end, it was awesome. The family gobbled it up! I will use this base for all my cream soups! Thanks for the recipe!

Easy Chicken Rice Casserole

Reviewed: Apr. 13, 2010
This recipe was great - quick & easy with NO leftovers! I changed it up a bit by using 1 can of condensed cr. of mushroom and 1 can of condensed cr. of chicken. I also added garlic pepper and a few other shakers from my spice cabinet. Will make this one again!

Crumb-Coated Chicken Thighs

Reviewed: Feb. 16, 2011
This was a great, quick way to cook chicken thighs. Way better than Shake N Bake. I did not have curry powder on hand. Instead, I added a little of Summer Savory. I also used Panko bread crumbs. I used boneless, skinless thighs and total cook time was about 45 min. (turning half way through) Everyone enjoyed.

Gingered Pork Chops in Orange Juice

Reviewed: Feb. 7, 2010
This was a nice recipe to change up the pork chops. The family liked them! I did modify slightly. I increased the fresh ground ginger to about 4 t. or 1 T. of fresh ground ginger (divided into 1/2). I put half of the ginger into the onions just at the end of cooking them along with wine to de-glaze the pan (being sure to cook out the alcohol). I added 2 T. Soy Sauce and 1 T. Corn Starch to the orange juice and whisked until smooth then added to the pan of pork chops/onion mixture. All in all, not bad. I served with a rice dish that has 5 different types of rice and fresh green beans.
