Baked Parmesan-Crusted Chicken

Hubby made this great dish with some slight alterations: breadcrumbs were used instead of potato flakes, the garlic was put into the melted butter, and tandoori spices were added to the mixture. The chicken was baked together with potatoes. Delicious!

Apple Cake V

Delicious and easy apple cake! Few changes: instead of walnuts I used shaved almonds and raisins. Also I added some milk in the batter, put less salt (1/2 tsp), more baking soda (1 1/2 tsp) and added 1 1/2 tsp of baking powder. Spices: 2 tsp cinnamon and 1 1/2 cardemon. About 1 hour at 160 degrees Celsius. The glaze is a must!

Moussaka

1 kg potatoes, sliced 1 cm thick, boiled 10 minutes; 3 aubergines, sliced 1 cm thick, grilled with olive oil salt pepper for 10 minutes; 500 gr minced beef, sauteed for 15 minutes with olive oil, 1 or 2 finely cut onions, 3 cloves of garlic, 1 can of tomatoes, tomato puree, salt, pepper, cinnamon, allspice, oregano; bechamel sauce of 40 gr butter, 40 gr flower, 1/2 liter milk, nutmeg, salt, pepper. Layers: potatoes, aubergines, meat, potatoes, aubergines, bechamelsauce. Top with grated cheese. 1 hour on 170 degrees Celsius.

German Apple Cake I

Less sugar (about 1 1/2 cup), which is a mixture of white and brown caster sugar. Apart from cinnamon, also some allspice (1/2 teaspoon) and cardamom (1/2 teaspoon). 1 teaspoon of baking soda AND 1 teaspoon of baking powder. About 75 minutes in the oven.

Chocolate Chocolate Chip Nut Muffins

Changes: 2 eggs, 3/4 cup cacao, 3/8 cup oil, milk chocolate chips, 1/2 cup slivered almonds (no walnuts). One hour at 170 degrees Celsius for one bakingpan (instead of muffins)

Pear Coffee Cake

1 cup white caster sugar, 2/3 cup oil, 2 eggs, 1 cup mashed pears (can) + juice, a bit more juice from the second can, but not all, 3/4 cup flaked coconut, 1 3/4 cup flower, 1/2 teasp cinnamon, 1/2 teaspoon cardamom, 1/4 teaspoon salt, 1/2 teaspoon bakingpowder and 1/2 teaspoon baking soda, 1/2 teaspoon vanilla essence, 3 soup spoons of ginger syrup. Pears of second can sliced and on a 'bed' of brown sugar in the bottom of the baking pan. bake 1 hour at 170 degrees Celsius.

One Bowl Chocolate Cake III

Some changes: 1 cup of Dutch cacao instead of 3/4 cup. No water, but instead more milk, in total 1,5 cup. Instead of 1/2 cup of oil, I used a mixture of butter and oil and some more of it too: 1/2 cup of melted butter and 1/4 cup of oil. Last but not least: chipped pieces of chocolate mixed in the batter. Cooking time about 1 hour. Delicious!

Spanakopita (Greek Spinach Pie)

My variation on this, loved by my Greek boyfriend: Instead of fresh spinach I use 2 packs (a 450 gr) of good quality frozen whole leaf spinach, extremely well drained after defreezing. One big Onion, 4 springonions, 3 cloves of garlic, some chopped up sun-dried tomatoes, and a bunch of parsley lightly browned in some oliveoil. Four eggs mixed with 1/2 cup (125 ml) cream and 225 grams of soft white goat cheese. Everything mixed and corrected for (quite a lot of) salt and pepper. For the bottom I use 4 leaves of puff pastry, and a fifth one cut up for the top. I bake it around 50 minutes on 175 degrees C.

Slow Cooker Beef Stroganoff I

This recipe (and most other Stroganoff recipes) is not tasty at all, no matter what quality of canned soup you use. Just do NOT ever use any canned or powdered soup in a stew! Just go through a little bit more trouble and make it all yourself. It is worth it!

Good recipe! If you don't have pickling spice, you can make it yourself. The main ingredients are: cinnamon, mustard seed, bay leaves, allspice, dill seed, cloves, ginger, peppercorns, coriander, juniper berries, mace, and cardamom. So put a bit of all this, and you've got it!

Cardamom Granola Bars

This is so good! I made some changes: I used about 1/4 cup brown sugar, 4 tablespoons honey, 4 tablespoons (slightly salted) butter, 1/2 cup of cranberries instead of raisins (goes very well with cardamom!), 1/2 cup of walnuts, 2 cups of oats, added 1/3 cup coconut flakes, and two heaped teaspoons of ground cardamom. I let it cool for one hour before cutting and the result was perfect. Oh, I did use the tip of another user to press it really hard before baking and also right after baking. I think this made the cutting after cooling much easier. They didn't fall apart at all. Thanks for the basic recipe!

Sun Dried Tomato and Pine Nut Stuffed Beef Tenderloin

Very nice stuffing. However, to prevent the meat from getting dry, I put puff pastry around the meat. Just roll it out slightly (otherwise you loose all the 'puff'), and put it around the meat. Put it on a rack to prevent the dough of getting soggy on the bottom. Depending on the size of the meat, the pastry and the meat should be done at the same time (about 20 minutes).

Best Ever Banana Bread

Great banana cake, especially with a few changes * Half white half brown caster sugar * Add 3/4 cup of shredded coconut and almonds or walnuts instead of pecans * Add some spice, for example 1 teaspoon cinnamon, and some allspice and cardamom * 1 teaspoon baking soda AND 1 teaspoon baking powder * 3 large ripe bananas.

Amazingly Easy Irish Soda Bread

Really good, with a few changes here and there. Half wholeweat flower, half normal flower, some more baking powder, only half the amount of butter, and slightly more buttermilk. No sugar, but some more salt and finely cut rosemary instead to make it a hearty bread! This turned out to be deicious, especially to eat with a soup or a stew.

Sam's Famous Carrot Cake

Delicious! I changed a few minor things: less oil (about 1/2 cup) and a bit more buttermilk (1 cup). Half white caster sugar and half brown caster sugar, 2 1/2 cup of carrots instead of 2, some more baking soda, and 1/2 teaspoon of allspice and 1/4 teaspoon of crushed cloves. I had to bake it about 20 minutes longer than in the original recipe, but it turned out great! Nice and moist, but not tóo dense. Definitely something I will make more often. I can really recommend to use a food processor, otherwise it becomes very time consuming.
