About this Cook
Before I'd reached my mid-30's (which was quite awhile ago) food was just a necessity of life...but then somewhere along the way I discovered my taste buds & everything changed (including my waistline!). Now, food - whether it be the preparation of and/or consumption of - is a luxury that both my husband & I enjoy - maybe a little too much!
My favorite things to cook
I am by no means an adventurous nor skillful cook. I love to keep it simple but just a bit beyond basic. My family loves just about anything Italian, Mexican or Southern. I guess to sum it up - easy comfort food.
My favorite family cooking traditions
Unfortunately for me there were no family cooking traditions, which is the main reason why I sought out the help of Allrecipes. My husband has no fear & will try anything & make it up as he goes but I need inspiration & a little more help turning my inspiations into edible realities!
My cooking triumphs
My main "triumph" is the fact that my granddaughter LOVES to help in the kitchen, is very interested in cooking & baking & even ties to come up with new inventions, especially for appetizers. SO MUCH FUN to "work" in the kitchen with her!!! Another triumph is that when we go camping there are no pre-packaged/canned meals allowed! With a little creativity & alot of ingenuity anything you can make at home can be made away from home!And for some reason we find that a recipe we may shy away from at home is something we're eager to tackle in the great outdoors!
My cooking tragedies
I was very intigued by leg of lamb, people who like it absolutely LOVE it & since we do love lamb chops I assumed we were some of those people...WRONG! Followed a very popular recipe (from another site), halfway through roasting my vintage Pyrex dish cracked in the oven, but we'd spent a few $$ on that leg so cleaned it all up very carefully (just a crack, not shattered) & continued on...We had unexpected company show up & with the wonderful aroma wafting through the house they were thrilled when we invited them to stay for supper...To make a long story short we are of the group that does NOT love lamb! What was that?

Rhubarb Strawberry Crunch
Loved it! Used 4 cups each rhubarb & straawberries, everything else as written. We found it to be a good balance of tart-sweet & the amount of crumble. We LOVE rhubarb so next time I'll use 5 cups rhubarb & 3 cups strawberries, & perhaps 3/4 crumble to suit our tastes, but it is great as is & definitely worth trying.

Creamy Vanilla Ice Cream
Creamy & delicious! Followed the recipe very closely - I doubled everything but TRIPLED the vanilla - cooking the custard mixture just to 180 degrees, stirring constantly. Stored in the fridge overnight & I'm not sure why but there were some curd-like chunks which I just strained out prior to adding the vanilla just before freezing. The double recipe was enough to serve 10 adult & 4 children & was LOVED by all! I'm really glad I tripled the vanilla, & I could see this easily being used as a base for other flavors!!!!

Tasty Sesame Tilapia
This was good, though nothing to "write home about". I added a few grinds of black pepper, marinated for 2 hours, then served with chopped green onion tops. I'll try this marinade again, (it definitely needs the black pepper) but I've decided that I just don't like tilapia, so I'll be using a different fish next time!
