Baked Fried Eggplant

My husband and I LOVED it! I used Italian breadcrumbs and added garlic, salt, pepper, and onion powder. I also melted some mozzarella cheese on the top. I served them for our "meatless Monday" dinner last night with a ramekin of marinara sauce and a salad. My kids weren't too keen on them, but they're super picky eaters.

Oven Fresh Seasoned Potato Wedges

AWESOME! I made the potatoes to go with bbq chicken sandwiches and my family loved them...even my picky 5 year old! Super easy, cheap, and totally yummy! Definitely something I could make on a week night after work when I'm rushed for dinner.

Colette's Smoked Sausage Fritatta

This is a great base! I followed the recipe pretty closely but I put it in a pie shell and made it more of a quiche. The basic recipe is great becaues it can be tweaked...and it tastes YUMMY!

Quick Cherry Turnovers

I make these all the time using apple pie filling. My husband LOVES them. Sometimes I even cut the crescent roll triangles in half to make smaller bitesized treates. I don't ice them but I do sprinkle with a little cinnamin sugar.

Easy Chicken Tetrazzini

My family really liked this...even my picky 4 year old! I used chicken broth instead of the water and chicken boullion cubes. I also added about 1/4c. cream cheese to the sauce and threw in some frozen peas like some other reviewers had recommended. Egg noodles worked great with this! I thought it was great and it's made the monthly menu at my house.

Blueberry Breakfast Sauce

This was SUPER easy and totally delish! I made it and put it over pancakes for my family. My husband was more than impressed and has already asked for it again!!! We're going to try it over icecream next time.
