Cheeseburger Meatloaf

Of all the meals that are my family's favorites, meatloaf is my very least favorite UNTIL I made this recipe. More simply put together, I put half the meat in the pan, sprinkled it with a tad of mozzarella I had left over and added a layer of cheddar. then I covered it with the remaining meat and ketchup to bake. wow! the texture the mozzarella gave it was wonderful. It was the first meatloaf I ever actually enjoyed. The whole family loved this as a nice change from the same ole same ole.

Baked Lemon-Basil Pasta

my kids LOVED this meal! I serve it with a nice spinach salad with lots of veggies and some warm garlic bread. It's definitely a keeper.

Artichoke Spinach Dip

accidentally made way too much of this (servings were set for 56 people instead of the 12 that I needed). It tasted really good and was very light and creamy. I used the whipped cream cheese instead of the block. it was very good the next day as well. I think next time I just might add a little lemon zest at the end.

Mama D's Italian Bread

my sister and I are baking this bread right now. we found that 3 cups of water to 1T of dry yeast was entirely too much water and never proofed. we dumped that. we have mixed 1Tbs. yeast to 1/2c water with the 2tsp.sugar, (according to yeast package direction instead of this recipes yeast direction). It then proofed perfectly. we then added the remaining 2 1/2cups of water to the recipe when we added the yeast to the flour. Everything seems to be going according to the plan now. will let you know how tastey it is tonight after dinner :)

Corn Casserole III

I've been making my version of this recipe for years and it's a family holiday must! I always add an egg and a couple hand fulls of cheddar. Most times I add a 1/4-1/2 a cup of whole corn also for texture. Try it, you'll LOVE it!
