BBQ Glazed Homemade Meatballs

I absolutely love this recipe! I have made these several times following the recipe exactly and also making a few changes if I didn't have everything on hand. I have used bread crumbs to replace the oats and my favorite barbecue sauce when I was in a hurry. Enjoy!

To Die For Blueberry Muffins

These muffins were a hit at my house with everyone. I have made them several times without changing the recipe at all and they are delicious! I was out of milk one time and substituted buttermilk which worked well. Also, made without egg and used the egg substitute recipe on this site once because my nephew is allergic to eggs and they turned out well too. Enjoy!

Turkey Brine

You have to try this recipe! My husband is not a big fan of turkey unless it is fried so consequently I have never made one. But I was determined to make one for Christmas this year and heard about brining from a friend. I followed some of the other reviewers suggestions and did half vegetable broth and half apple juice. I also put a celery stalk, carrot and onion in the cavity as suggested by VACookie and baked it the was they suggested. It was wonderful!

Tex-Mex Turkey Soup

Loved this soup! A big hit with the family. I made a few changes to use what I had on hand. I used chicken broth for half the water and did not add the bouillon. I only used one 15 oz can of diced tomatoes and one 15 oz can of tomato sauce instead of soup. I added a small can of diced chiles to punch up the heat a little. I did not add any sour cream because my kids are not fans but my husband and I used it as a topper. Alot of options with this recipe. I'm sure I will make it again and again!

Ginger Glazed Mahi Mahi

This was really good! My husband and both kids enjoyed it. I used dry ginger instead of fresh because it's what I had on hand. I also grilled the fish instead of frying making a foil pouch and basting several times with the sauce. Will definitely make this again.
