Coconut Lime Rice
This was absolutely delicious! I usually practice a recipe at least once before serving it to guests, but I took a chance and prepared this for a group of friends today, and served it with satay; everyone agreed that it was wonderful. I followed the recipe exactly (no substitutions), and it was perfect. We will definitely make this again. Thank you!

Peanut Butter Vegetable Chicken Soup
We loved this! The peanut butter flavor is very subtle, and the average person would never know it was there unless you were told; in fact, I offered a cash prize to my kids if they could guess the "secret ingredient," and they tried so hard, but couldn't do it! My husband's comment was that the PB disguised the flavor of the veggies (he hates them) and that it was the best chicken soup he'd had. The only change I made was to add egg noodles at the end of cooking, and I think next time I will omit the potatoes, because no soup needs both pasta and potato. Enjoy!

Pizza Casserole
This is a great go-to recipe, one that everybody likes, and is very easy to throw together. I use rotini instead of egg noodles, because I find that they stand up to stirring better and hold more flavor than the recommended egg noodles. I also quartered the pepperoni, as I found the slices tend to "spoon" together and end up stuck together in stacks in various places about the casserole. Like most other casseroles, this can be assembled whenever you have time and stored in the fridge until ready to bake - just add on about 5-10 minutes to the baking time.
