Just one comment: Preheat the oven 15 minutes before the end of the second rising otherwise you'll be heating your kitchen for 3 hours!

Italian Wedding Soup I

On the whole this recipe is an excellent example of Italian homestyle cooking. I had to rate its quickness and easiness factors as average since I think the author underestimated the time it takes to form the meatballs. Plus the escarole is pretty sandy and needs to be thoroughly rinsed. A suggestion: don't dice the carrots. Rather cut them into 1/2 inch thick rounds. That will prevent them from overcooking and becoming mushy. Incidentally, I prepared the recipe using cubed boneless, skinless chicken breast and substituted quick cooking barley for the orzo. Try it! You'll like it!
