Boilermaker Tailgate Chili
I tried this recipe tonight and my husband says, it's the best chili he ever had. I followed the recipe almost exactly, just added some of my own little "twists": I used 1.5 lbs hot Italian sausage and 1.5 lbs 93% lean ground beef. Added 2 habaneros in addition to the other veggies (we like our chili hot)! Sauteed all the veggies (using olive oil cooking spray) prior to adding them to the pot. (I always do this when adding veggies to sauces, think it adds a great flavor). Put the 4 beef boullion cubes in 1 cup of water, boiled it, and threw that in the pot. The beer I used was PBR. Also I only used about 1.5 tbsp of chili powder (thinking I could always add more later if need be, but that turned out to be enough for me). So just a few small tweaks, other than that followed the recipe exactly, and it's a keeper! Thanks!

Chicken Enchiladas I
Wow, was this ever good. I did tweak the recipe as per other reviewers suggestions. I shredded the chicken, substituted 2 cups of Pace Picante Sauce for the tomato sauce and water, used a small can of diced jalapenos instead of green pepper, and added about 4 tbsp. cream cheese, and 1 can refried beens w/ jalapenos to the filling in addition to the other ingredients (we like it really hot). Used 2 jars of enchilada sauce rather than taco sauce to pour over the rolled enchiladas. Our grocery store has HUGE chicken breasts so the filling made 11 generously stuffed enchiladas rather than just 8. I think the filling is good enough to use for a dip for tortilla chips as well...or even eat plain! My husband said these were better than the enchiladas from the Mexican restaurant by us and that is a huge compliment because that is a good restaurant.
