Moist and tasty (I only used 3 eggs, and added 1T ginger)! Awesome paired with Caramel Frosting I and sprinkled with pecans.

I reduced the salt by half. I made this in bulk to give as Christmas gifts. It was well received.

Zucchini-Chocolate Chip Muffins

Reviewed: Oct. 23, 2013
Too sweet! Reduce the sugar by 30-50% if you are going to double the choc. chips. Wonderfully moist though, even with 100% whole wheat flour.

Creamy Chicken and Broccoli Casserole

Reviewed: Mar. 31, 2013
I mixed up the order of preparation a bit (cooked the chicken up first and then used that pan for the broccoli) but loved the simplicity of making the cream sauce in the pan with the broccoli. Quick and tasty!

Baked Beef Stew

Reviewed: Dec. 27, 2009
Loved that it tasted fantastic without the 'browning the meat' step. I doubled the recipe with great success. Just added some dried rosemary and thyme and I'm definitely making this one again!

White Chocolate Raspberry Cheesecake

Reviewed: Dec. 27, 2009
I'm not a big cheesecake fan but those I baked it for all thought it was fantastic. I do think that 1.5 C of crushed Oreos is plenty.

Marinated Grilled Shrimp

Reviewed: Aug. 22, 2008
FLAVORFUL! I did use ketchup, as one reviewer did, I used balsamic vinegar instead, and used 1 t dried Italian seasoning instead (only because I was missing the ingredients the recipe called for). TASTY! Then I was only cooking for my little ones who wouldn't appreciate the labour of skewered shrimp, so I pan fried them for a few minutes, drained the liquid into a bowl and then let the shrimp get a little crispy, then added some of the liquid back in to coat them. Thanks for the great starter recipe!!

Light Oat Bread

Reviewed: Feb. 25, 2008
Wonderful texture!! The oats truly disappear. I did add 2 T wheat germ, used 3/4 C whole wheat flour in place of some of the white and added 1/2 powdered milk just to boost the protein and make it healthier. It still turned out light and tasty.
