Awesome and Easy Creamy Corn Casserole

I made this for a friends' thanksgiving after thanksgiving and it was amazing! I doubled the recipe, used a throw-away aluminum casserole pan, and added 1 bunch of green onions plus 6 strips of crumbled REAL bacon and cooked it for roughly 1 hour and 15 minutes with 3 minutes under a broiler. It was AMAZING to say the least!! Out of the 30+ dishes, it was the only one that had no leftovers!! Winner winner, chicken dinner!! Will absolutely make this again!

Apple Crisp II

So perfect!! I ended up putting it in two different tart pans and loved it. I think being so spread out made the crisp part crispier :) I also subbed crushed graham crackers for the flour. Very happy with this change. Enjoy!!

Green Bean Casserole Remix

This was fantastic! Made it for a post-Thanksgiving dinner with friends and it was a huge hit. 4 different types of green bean casserole and this one was the only one called out for how good it was specifically. Very proud :) I made some tiny variations but nothing that changed the integrity of the recipe. Subbed Turkey Bacon for the regular, fresh green beans for frozen, skim milk in a roux for the half-and-half, and used sliced baby portobellos. I forgot the parmesan cheese but didn't notice it. This was fantastic!

Spinach and Tortellini Salad

I added fresh red peppers and used fresh spinach (about half of a big bag.. no measuring though). I also used grape tomatoes halved and my dressing was "Italian Dressing Mix" from this site. It was so delicious!! Will absolutely be making this again!

Grilled Chicken Salad with Seasonal Fruit

Delicious! Made this with strawberries and subbed Raspberry Vinegar for the Red Wine. I also added a drizzle of balsamic reduction and o..m..g.. was this delicious! And soooo healthy!

Texas Caviar I

Perfect as written! I did add in some black beans and subbed orange bell peppers for the green just because I wanted the colors. It was a MAJOR hit at a party and I couldn't have been happier!

Easy Chicken and Broccoli Divan

This was easy and I liked that it used ingredients I already had laying around. It wasn't spectactular but very good. I didn't the butter over top and didnt't miss it. Subbed Cream of Chicken for Cream of Broccoli, don't think that altered the recipe that much. Again, very good but not amazing.

Cilantro-Lime Dressing

This dressing was FANTASTIC! We used it as a dressing on a grilled chicken salad overloaded with yummy veggies (everything from yellow bell peppers to fresh corn) and it was unreal. I could eat that every single night! My only change would be to make a lot of this! Maybe double or quadruple the recipe as this made only 3 servings in our household. I didn't use a full 1/3 c of the honey but I also didn't measure.. just put a huge helping to what I think would measure maybe 1/4 cup. It was so fantastic though! Thank you for the recipe!

Grilled Salmon I

Fantastic!! No "fishy" smell, made a nice crust on the fish and it was beautiful :) My only not-really-a-complaint complaint was that the skin stuck to my grill pan. But when I used a spatula to lift the salmon the skin stayed behind. Lots of elbow grease later on, but made the salmon perfectly de-skinned.

Lemon Chicken Piccata

I'm sorry but this was not to my liking. I made it exactly as written and the lemon taste was overwhelming, and not in a good way! It was extremely tart so I had to add in a little sugar to try to make this taste better. It helped, but man, this was not to my liking I will definitely not be making this again!! The hubby was sweet and didn't say much except "I'm glad you can say when a recipe isn't good". HAH! That was his hint ;)

Slow Cooker Chicken and Dumplings

Ugh! Maybe I did something wrong?? Doubtful though :( I halved the recipe as I only needed four servings. It was INCREDIBLY dry!! I ended up having to add in roughly 2 cups milk (didn't measure.. just eyeballed) just to get a creamy consistency. From that point, there was absolutely no flavor and I highly doubt that had I not diluted it would've been flavorful at all. I mean, cream of chicken soup and really nothing else! BLAND! Secondly, the cooking instructions are definitely off too. Cooking this for 6 hours on High would've been an even worse disaster! So I cooked it about 3 hours on High. I also ended up having to add in one of those Knorr concentrated chicken flavor packets just to give it some sort of taste. Added in a bunch of garlic and salt and pepper. It was still "hospital" like so I served it with crushed red pepper flake and a TON of hot sauce. Overall, I will definitely NOT be making this again. So glad I didn't make this for anyone beside the hubby and me. Also glad he is forgiving 'cause this was embarrassing.

Cinnamon Rolls

One word.. AMAZING! I was worried as I have never baked with rising yeast (complete novice baker here!) but they came out so scrumptious! I made them all the way until they were in the pan ready to double and popped them in the fridge. The next morning I put them in a barely warm oven (let my oven begin preheating at 350 for about 5 minutes and turned it off.. just enough to make it cozy in there) and let them rise until they doubled in size. Seriously, these were incredible. Another trick I did that I think helped was I softened the butter and added the sugars (half white, half brown) to make a buttery, sugary spread. I spread it over the dough and rolled them up. Followed the recipe from that point forward. I don't know for sure if it made them better as I hadn't done it the regular way but it was quick, easy and barely any mess (my favorite!!). I only made 12 rolls and am super excited I have another half of the dough waiting on me in the freezer :D Can't wait to make these yummy cinnamon rolls again!

Herman Reunion Cheese Ball

Made this as Christmas appetizer and it was so delicious! However I must say, 3 blocks of cream cheese?!? Really?? I made this with only one block of cream cheese, which I mixed by hand (pulling out the food processor seemed like a lot of hassle & clean-up.. I didn't miss it) and left the other ingredients the same and man oh man did it come out good!! I sprinkled smoked paprika on the outside as packed it with nuts. Tip, as your rolling it in nuts keep pressing them in. It makes for a nice, sturdy cheese ball and ensures there are plenty of nuts in every bite. Will most definitely be making this again with my slight modifications.

Chocolate Crinkles II

This is by far the best cookie recipe I've ever made and for many, many reasons. All the ingredients are things I already have laying around. It's a very simple recipe, the steps are pretty basic. But the kicker is the versatility! I have made the recipe as-written several times and each time they are spectacular. Other variations: roll the dough in dark chocolate cocoa powder instead of confectioner's sugar then drizzle icing in a pretty pattern once they've cooled.. very chic looking. I've also rolled them in granulated sugar and then popped a frozen Hershey's Candy Cane Hug (OMG.. this is incredible.. the mint and chocolate and creaminess.. just OMG). Play around with the recipe! Thank you so much for sharing this!!

Cornbread Muffins I

Maybe I did something wrong (probably.. I'm a horrible baker) but these were horrible. They were dense and 'hockey puck' like and just yuck. Next time I'll save the time it took to make these and my reputation on making superb recipes and stick to the boxed mix. That works every time.. this.. DIDN'T.

Fresh Asparagus and Chicken Casserole

UGH! I really wanted this recipe to come out amazing but that didn't happen.. at all. This was bland, boring and overall a complete bust. It was quite beautiful but will definitely NOT be making this again as written. The entire recipe needs to be updated to include seasoning or something.

Taco Pasta Salad

This was tasty. I like the concept behind this.. taco.. salad.. AND pasta! Some of my favorites! But the lettuce got weird and droopy, somewhat chewy too. I'd make it again though :) The DH liked it and it was low-fat.. I'll get over the chewy lettuce!

Raspberry Oatmeal Bars

Made these using strawberry jam and added some sliced almonds for even more crunch. The flavor was fantastic! But it didn't hold together at all. It became more like a crumble which I didn't mind since it was just for the DH and me, but wouldn't be a dessert I'd make for company.
