About this Cook
Born and raised in New Orleans area, I consider myself a true Cajun. Love the South and do not think I could live anywhere else.
My favorite things to cook
I cook a lot of Italian, since my mother was Italian and Creole and Cajun since I live in the Deep South.
My favorite family cooking traditions
I love to cook stuffed artichokes, oyster dressing, and baked macaroni like only Southern cooks can.
My cooking triumphs
I once cooked for a fund raiser and was told to prepare for only 50. Well, I did prepare for more and good thing. Everyone that attended not only bought their meal, they bought another plate to go. I was very proud.
My cooking tragedies
Oh, well, this was many years ago. I was young, 19, and only married a month when for Thanksgiving at my Aunt;s house, I was told to bring baked macaroni. I fixed it and baked it and set it on the table with all the other foods. When my dear uncle scooped it up in his plate, I saw he was looking at and not saying anything. Then he put it in his mouth, and it went crunch, crunch. Every one started lauging, and asked if I boiled the macaroni before I baked it? I cried, of course, and my wonderful, sweet uncle, just kept eating and telling me he liked his crunchy. It took me a long time to live that down, but it was funny.

Chocolate Eclair Cake
This is the best tasting recipe, and it was a hit with our Homeowners Assoc. In fact they all asked for the recipe.

Italian Bread I
it was very tasty but i found it was very heavy bread, very course. I think if i make it again i would use yeast. Flavor was very good.
