Chocolate Banana Bread

Fabulous! I've made it as written, but this last time, I only had two bananas, so I added one whole shredded zucchini to make up for it. Turned out great, with added nutrients!

Strawberry Oatmeal Bars

I needed to use up some excess strawberry jam, and this was a perfect way to do it! The bars were rich and flavorful. I found them too sweet, but my husband didn't mind them. I might try them again with some pretzels in the crust, or something else to give them more crunch.

Crescent-Wrapped Brie

Beautiful and delicious! I made two for New Years' - one with cranberry chutney and one with pesto. They both disappeared pretty quickly in a group of 12 people. I didn't bother with the cut outs, I just arranged the crescents with points out, like a sunburst, and then wrapped the Brie inside. Lovely.

Kiki's Borracho (Drunken) Beans

The first time I made these they did not come out at all. I must have underseasoned them because they were bland and strange tasting. Luckily, I tried again! We love beans and I wanted to use up some old MGD. So I used what we had on hand and mimicked this recipe, and they were AMAZING. I love the flavor. My only real innovations were that I used some leftover pork fat, and added some of the vinegar from a jar of sweet jalapenos. The fat and sugar brought all the flavors together beautifully. Thanks for sharing this! P.S. My beans had soaked almost 24 hours and cooked fully in about an hour.

Delicious! I can't stop eating them. Nutritious, delicious, and inexpensive - what more could you want? I added some chipotle Tabasco and the juice from a jar of jalapenos for extra flavor.

Peach Muffins

Wonderful recipe! I have made this as a bread twice now, with great results. I increased the peaches and decreased oil and sugar. I also sprinkled wheat germ on the top for added nutrition. This is so simple, uses ready ingredients, and turns out beautifully. I love the reddish color from the peaches too.

Easy Morning Glory Muffins

Delicious! Restaurant quality - I am proud to serve these. I decreased the oil to 1/2 cup and added an extra shredded apple. I also added a few minutes to baking time - they weren't quite ready after 20 minutes. Will definitely make again!

Jumbo Fluffy Walnut Apple Muffins

Incredible! So fluffy and sweet; great for an on-the-go breakfast. I subbed applesauce for 2 Tbs of the butter. Next time I will omit some sugar too, since they were really sweet. I added some wheat germ on top for extra nutrients. So yummy! I made 12 regular muffins and a small loaf from the batter. They disappeared fast!

Real Hummus

So easy and remarkably similar to professional grade hummus! I had no idea I could make the store bought stuff so well and cheaply. I was worried my lack of a food processor would complicate the recipe, but my blender worked great for this. I would stick with 2 Tbs of tahini and adjust garlic and lemon to taste. (The tahini is bitter and too much can be unpleasant.) Use olive oil if it needs more creaminess.

BBQ Country Style Ribs

Very easy and turned out great! I would emphasize to add plenty of water to the first baking, and then drain most, but leave a little in for the second baking. You can't get too moist, but it's easy to get too dry, especially with cooking uncovered for so long.

Cheesy Catfish Chowder

Delicious as written - I made a few changes, some worked, some didn't. I recommend adding a splash of hot sauce. To make a healthier version, use skim milk and reduce cheese to 1 cup, and increase veggies. Serve with sourdough bread for a hearty lunch!

Banana Pumpkin Bread

I made as directed, but added 15 minutes to the cooking time. It turned out okay. Mine came out fully cooked, even though I made just one large loaf. The bread was a bit dense, though I blame the whole wheat flour I used. It was a good wau to use up extra pumpkin and bananas, but probably will not make again.
