Creamed Peas with Bacon

I was craving creamed peas so I hunted for a recipe and found this one which added one of my favorite ingredients...bacon! I didn't have regular bacon on hand so I substituted pre-cooked which left me with no bacon grease. I used butter instead and added a little garlic powder and onion powder. Also used frozen peas instead of canned. Regardless, the dish was delicious and comforting.

Bacon and Tomato Cups

I used several of the reviewer's suggestions...phyllo cups, substituted 1/2 the mayonaisse with cream cheese and also added some garlic granules. Doubled the recipe. It turned out great and everyone seemed to love them. They were gone in 5 minutes!

Fruited Curry Chicken Salad

Firecracker Grilled Alaska Salmon

We love salmon served any way but this marinade is great and really compliments the salmon. I've made this for company and had rain the day it was to be grilled so I broiled it instead and it came out great that way too. Although I do prefer it grilled.

Broiled Tilapia Parmesan

My family finds tilapia a bit bland but because it is reasonably priced and good for us, I buy it anyhow. So this recipe was great because it added a nice pungent flavor to the fish. Cooks up in a jiffy and gets nice and crusty on top.

Garlic-Lemon Double Stuffed Chicken

We love this recipe! It is sinfully delicious! I'm not really interested in a "sauce" over the chicken (we like it crunchier) so I decrease the amount of butter to about 1/2 cup but keep the other sauce ingredients the same. Also I usually make this for company and make about 12 breasts but use the same amount of cheese, just smaller slices and it still turns out very rich. I have made this a couple of days ahead and stored in the freezer or fridge before cooking. Just brought it to room temp. before cooking as usual. Don't forget to sprinkle garlic salt and paprika over it to add some flavor and color!

Chicken Gruyere with Sauteed Mushrooms

This is a great company entree dish. Everyone always loves it whenever I've made it. It is rich. We haven't found it bland like some other reviewers have mentioned. I've substituted both Emmanthal and Swiss cheese for the Gruyere and had good success.

Eric's Best New York Style Cheesecake

I love making cheesecakes and this one is delicious and creamy. I do have a little problem when making this though...it always runs over the top of the pan. So I bought a 10 inch springform and it still ran over! I always do my cheesecakes in a water bath so at least it doesn't mess up my oven but it doesn't "look" pretty. I think my oven cooks too hot so I will try to lower the temp. next time.

Chickpeas in Tomato Sauce With Feta and Wine

My mother-in-law loves garbanzo beans so I've made this a couple of times when she visits. We both like it but I'm always surprised that it isn't more flavorful with all of the delicious ingredients. Haven't really had time to tweak the recipe yet but have added fresh spinach and that worked well. This is nice for a fun and different side dish.

Beth's Spicy Oatmeal Raisin Cookies

This is my favorite oatmeal cookie recipe. These cookies maintain a bit of puffiness instead of flattening out like those made just with butter. I do soak my raisins in some rum (about 1/4 cup)for a few hours before I make these.

Classic Bran Muffins

I love this recipe! The muffins are delicious and moist. I first printed this recipe out in 2002 and have been making them regularly ever since. I do substitute some molasses for the brown sugar to give them a nice, dark color. They freeze well. Recently I substituted 1/3 cup Splenda and 1/3 cup molasses for the brown sugar to cut back the sugar content and they still came out delicious.

Chai Tea Mix

Just made this and we love it! I followed some other suggestions: used 2 cups instant milk, used 1 cup brown sugar and 1 cup splenda which made it nice and sweet, used the extra spices like white pepper and freshly ground nutmeg. Sent some to work with my husband and they all want the recipe now!

Almond Filling

This was, surprisingly, a little bland. However, after it soaked into the cake a little longer (2nd day)it tasted delicious. I made a three layer cake and put this between one layer and an apricot filling between the other layer. They complimented each other well. I topped it off with Special Buttercream Frosting also found on this site.

Luscious Spinach Artichoke Dip

I made this for a party and doubled the recipe. Everyone raved about it even those who don't like vegetables. I think next time I will cut back on the amount of spinach and artichoke though. Otherwise it was delicious.

This was easy to make and easy to work with. I tried it on my first "professional" layered cake for a gathering and it stood up well. We were all sampling it even before it made it on the cake.

Strawberry Spinach Salad I

This recipe was easy and fun. I made it for company and everyone enjoyed it. One flaw was that my poppy seeds were a little bitter and that affected the taste of the dressing (I did cut back on the amount of sugar)but by the time it was dispersed throughout the salad, the bitterness went unnoticed.

Overnight Blueberry French Toast

I made this for a Sunday brunch when I had company. Everyone loved it. It is nice to make the night before and bake the day of to free up time. I did use more bread than called for,cut back the cream cheese, added cinnamon and cooked the blueberry sauce for alot longer than the recipe calls for. It was great and I will be making again for company.

Judy's Strawberry Pretzel Salad

My mother-in-law makes this and I have to say mine, following this recipe was better. I did add some extra sliced, fresh strawberries to the jello. It is a fun combination of flavors and a nice refreshing summer dessert.
