Spicy Sweet Potato and Coconut Soup
I really enjoyed the soup and was pleasantly surprised with the taste. There were a few things I omitted bc I didn't have it or chose not to use it; cilantro, sesame oil and substitute vegetable broth and used chicken broth. I'll definitely have this soup again; however, I'll take the advice of another reviewer and be sure to shave the "hairs" from the fresh ginger or even use ginger paste to give that flavor that only it has. I wasn't sure how the ginger would be being that it was still in the soup, but it actually had a mellow flavor and wasn't as pungent as I thought it'd be. Oh yeah, i used my last 2 tbsp of lemon juice so the third was lime bc i like how lime marries with Asian dishes. Great recipe in spite of the subtle changes I made..

Banana Pudding IV
I got a taste of this pudding at the Amish market and it was so good to where I would only go to get their pudding, (super-dramatic pause) for $10, large about 24 oz. Now I'm saving money and making people smile & fat. I took the advice of others and used 2 boxes of banana creme, next time I'll use vanilla in place of banana, 2 cups of vanilla almond milk and reduced fat cream cheese and (the kicker) Golden Oreo cookies. You all MUST try it because the cream just does something that intensifies the pudding to where my tastebuds were having orgasms. Hope you all enjoy the twist.

Mexican-Style Spaghetti and Meatballs
I was having friends over for dinner so I thought it'd be a good time to try this recipe. I couldn't find a type of chili powder that was called for; however, I was able to sub a few things but, nothing I'll share. Just note that it turned out great and they went home happy and one is sleep on the couch. The meatballs sort of took me back to when I was a child so it was fun making those too. I might have gotten carried away with the peppers because my lips are just cooling down. I'll definitely make this again, I'm thinking to an office potluck for something different.
