Peanut Butter Chicken Skewers

I didn't grill the chicken as the recipe suggested but rather sauteed the chicken and boiled napa cabbage to go with it over rice. It was so delicious; I made it twice that week for dinner! If you decide to go this route, make sure you drain the cabbage WELL or you're going to dilute the sauce upon mixing - which you don't really want.

Szechwan Shrimp

This was really delicious and yummy. I cut down a bit on the spice (just a pinch of red pepper) for personal preference and used a pre-frozen, deveined and headless shrimp package. Usually I like to use fresh shrimp for cooking but since this recipe has so much flavor from the sauce, it really doesn't matter. Make sure to use large shrimps if you can, otherwise cooking it with the sauce can cause it to pretty much disintegrate. I also recommend that you thicken it up with a slurry of cornstarch if you want to put some sauce on rice. Stir-frying or steaming some green vegetables to mix in with it is a great idea too. Otherwise, the flavors are great! Definitely a keeper for my arsenal of easy meals.

Chicken Marsala

I've made this a few times already, and every time the flavor is just fabulous! The only things I would change would be to add cornstarch + water for some extra sauce (or heavy cream if you like) and plenty more mushrooms.

Avocado Chicken Stir-Fry

I followed the recipe exactly but omitted chicken broth because I didn't have homemade broth at hand and I don't like using premade kinds: too much MSG. I replaced the 1/2 cup of broth with water and kept the chicken's juices after cooking it. This recipe was a wonderful surprise, tasted better than I thought. And whoever says avocado doesn't belong there is dead wrong!

Hungarian Mushroom Soup

Wonderful recipe! I wouldn't change anything except use fresh dill because it makes the flavor that much better. I did 8 servings worth, and made this for my boyfriend's family for dinner. They loved it!

Basic Curry Sauce

Loved it! I must say the blending process was very crucial. You need a good blender for this, otherwise you won't get a creamy smooth paste, so don't try to cheapen out on it!

Greek Penne and Chicken

Good, fast and easy! Definitely recommended if you're on a low budget and time. I replaced artichoke hearts with mushrooms as a personal preference and it works just as great.
