Aunt Norma's Rhubarb Muffins

Delicious!! I did make a few changes to the recipe. I used 1 1/2 tsp. baking powder to make them a little more fluffy. I also didn't have buttermilk so I put 1 tbsp. of white vinegar in a 1 cup measuring cup and filled the rest with milk and let it stand for 5 minutes. I used 2 cups of rhubarb and it was perfect. I also omitted the walnuts because I'm not a big fan. These were the BEST MUFFINS I've made in a while (and I bake a lot of muffins!!). I'll definitely be making these again!!

Blueberry Cheesecake

A very easy and delicious cheesecake recipe!! I only changed 1 thing in the recipe and that was to double the amount of jelly in order to completely cover all of the frozen blueberries - you need to seal all of the blueberries! I made this for a family birthday party and everyone loved it. I'll definitely be making this one again!!

Rhubarb Bars

It was OK. The bottom crust was bland and dry, the middle was yummy, and the topping tasted too much like pure hard sugar. Next time I'll stick to my old favourite, rhubarb crisp - much easier to make too!

Haddock Marinara

A simple and delicious recipe (even for my non fish-loving husband). I used everyone's advice and altered the recipe a bit. I used 1 cup of tomato sauce, drained a can of diced tomato really, really well (or it will be too juicy), added about 1 tsp. of italian seasoning, and sprinkled the fish with Kraft paremesan cheese before adding the grated cheese. Thank-you all for your tips!
