Pumpkin Apple Streusel Muffins

Easy to throw together and great result. Big hit with kids and adults an so I will definitely make again. I made a half batch and it was perfect for a full pan of mini muffins. I made only the muffin part and not the streusel so my reivew is for that part alone. The muffin was very moist, flavorful- being more pumpkiny than applely but the apple chunks were delicious and made it more than just another pumpkin muffin. Definitely sweet enough that I don't think they would need streusel. I finely diced my apples by hand, so they were appropriate for mini muffins (and toddler mouths) and they were perfectly cooked. My mini muffins took about 18 minutes to cook.

Fresh Southern Peach Cobbler

This peach cobbler was amazing!! My husband said it was the best he's ever had in his life and I agree. It will always be our go to recipe now. I was worried when I read one review saying it was"cakey that it would be more like a coffee cake or something but it wasn't in my opinion. It is like a cobbler but the cobbler part is a little more cakey than just crumbly if that makes sense. I took the advice of others and cut my peaches into larger chunks - about 8 slices per peach. They were perfect after cooking. To make peeling easier I dropped my peaches in boiling water for 30 seconds and then into an ice water bath. The skin came off very easily.

Angel Food Cake I

This cake is wonderful. I will never go back to store bought angel food cake/box mix again. This is so much better- much more texture and flavor. I used egg whites from a box and added cream of tartar just after the eggs started to get foamy (how I learned to do it). I was worried when mixing the dry and wet that the grainy texture or loss of egg volume would be a disaster but it was perfect. I didnt have a tube pan, just used my bundt cake pan. I cooled it upside down on a beer bottle until it was completely cool and it came out with just a little bit of loosening of the edges with a knife. This is a keeper!

Butter Icing for Sugar Cookies

I am reviewing this As Written- no modifications. The recipe calls for way to much vanilla extract. One teaspoon to one and a half would be fine. A whole tablespoon makes the frosting taste like extract. The consistency/end appearance were great but beware- don't follow the recipe to a T.

Rhubarb and Strawberry Pie

I followed the advice of one reviewer to use a lattice top, let it stand in the oven with the heat off for 10 minutes and I let it cool completely before cutting. It was very runny. We will eat it over ice cream but I'll find another recipe for my next pie.

Angel Food Cupcakes

This recipe is helpful if you are wondering if you can make a box of angel food cake as cupcakes. Yes, you can. But I have to give this 3 stars because the recipe makes way more than is stated and I found at 375 the cupcakes browned too fast. I tried lowering the temp and they cooked beautifully at 350 for 16min. I would recommend serving these the day you make them to make the most of the texture that is characteristic of angel food cake.

To Die For Blueberry Muffins

I was worried these wouldn't come out ok since the batter seemed so thick but they were perfect. Lovely texture, blueberries stayed suspended and were sweet enough for us. I think if you are used to the box kind you may find the muffin part a bit less sweet but with the crumb topping they are definitley sweet enough. This is my go to muffin recipe now. I have halved the topping for less sugary breakfast and they were still fantastic.

Fluffy Biscuits

I used an organic shortening with palm oil instead of crisco. Very easy and definitely the best and flakiest biscuits I've ever made. This will be the go to biscuit recipe in our house.

Quick and Easy Alfredo Sauce

This sauce was quick, easy and creamy. I could taste the cream cheese though. It was not enough to ruin the sauce but it did taste different from alfredo I am used to. I would use it again when I need quick alfredo but I would love to find a really authentic tasting recipe.

Mmm-Mmm Better Brownies

I made a half batch last night using oil, omitting walnut and adding a handful or so of chocolate chips. We loved these brownies but I think part of it was I added some chocolate chips to the batter before baking. The brownies were fudgy in the middle and chewy on the edges, just the way my family likes them. They aren't as sweet and chocolatey as box mix so I added the chocolate chips to replicate the box kind my husband loves. Since they don't have trans fat or dairy in them, I am over the moon about them and will definitely make them again.

Iced Pumpkin Cookies

This is a solid recipe I make over and over. It is a cakey cookie but I love them for that reason. I don't store them in an airtight container or else they get a bit too soft.

Slow-Cooker Chicken Tortilla Soup

This soup was good but not amazing. It definitely improved when we sprinkled cheese into each bowl. It was very healthy and easy but I felt it was missing a little something that I couldn't put my finger on. Could just be my taste. I followed the suggestions to cook whole chicken breasts in the soup for 4 hours and shred- definitely the way to go!

No Fry Crab Rangoon

The filling was good. I knew it wouldn't be as good as a fried one but I was disappointed that the centers of the wontons didn't crispt up, even after I added a few minutes under the broiler. I will experiment next time using a spray of oil over the wonton before cooking or trying to bake them in mini muffing cups to see if that helps.
