Soft Christmas Cookies
As written the dough was dry and crumbly and almost impossible to use. We salvaged it enough to make a dozen and cut back the cooking time. The only positive was that the cookies held their cut out shapes well. I usually make cookies with butter but these tasted just slightly off with margarine. My intent was to make a cookie with less dairy in it. I will try using 3c of flour next time and up the vanilla perhaps to help offset the margarine notes I detected. Definitely follow the modifications offered by others if you want to make this recipe.

Pumpkin Apple Streusel Muffins
Easy to throw together and great result. Big hit with kids and adults an so I will definitely make again. I made a half batch and it was perfect for a full pan of mini muffins. I made only the muffin part and not the streusel so my reivew is for that part alone. The muffin was very moist, flavorful- being more pumpkiny than applely but the apple chunks were delicious and made it more than just another pumpkin muffin. Definitely sweet enough that I don't think they would need streusel. I finely diced my apples by hand, so they were appropriate for mini muffins (and toddler mouths) and they were perfectly cooked. My mini muffins took about 18 minutes to cook.

Fresh Southern Peach Cobbler
This peach cobbler was amazing!! My husband said it was the best he's ever had in his life and I agree. It will always be our go to recipe now. I was worried when I read one review saying it was"cakey that it would be more like a coffee cake or something but it wasn't in my opinion. It is like a cobbler but the cobbler part is a little more cakey than just crumbly if that makes sense. I took the advice of others and cut my peaches into larger chunks - about 8 slices per peach. They were perfect after cooking. To make peeling easier I dropped my peaches in boiling water for 30 seconds and then into an ice water bath. The skin came off very easily.
