Pineapple Stuffing

Absolutely scrumptious! The whole family loved it and asked that I make it again. Used a little less sugar than called for, otherwise didn't change a thing with the recipe. Might add some cranberries for color at Thanksgiving.

Heaven and angels sing! Quite possibly the best cookie I've ever made. Like another reviewer, I doubled the cinnamon and ginger, and baked on parchment paper. Perfect!

Broiled Tilapia Parmesan

Excellent! I tweaked it based on the first reviewer's suggestions: added bread crumbs, red pepper flakes, used celery seed, etc. Turned out fabulous with the tweaks!

Mom's Best Peanut Brittle

Fabulous recipe! Like others, I added a dash of vanilla. I also noticed that if you wait to add the peanuts later in the cooking process, the brittle comes out much lighter in color. I like the caramel color, so I make sure to go ahead and add the nuts in the beginning. Just keep stirring frequently so they don't scorch on the bottom of the pot! I also found that using a Claphalon cookie sheet works great for no-stick, easy breaking and clean up!

Cranberry Meatballs

Very tasty! I used a bag of frozen pre-made meatballs since I had one on hand, and I used turbadino sugar instead of brown sugar. Turned out divine! Even the 3 year old and the 15 month old screamed for more!

Cranberry Salsa

Fantastic recipe! Like another reviewer, I made a couple of modifcations, mostly just so I could use what I already had on-hand. I substituted 1 tsp of orange extract and 2 tablespoons of cherry syrup for the Grand Marnier. I also added about 1/4 cup chopped white onion. The flavors blend so well together. This makes a nice, fresh alternative to traditional salsa. I'll be giving some away over the holidays for sure!!

Spinach Noodles

These were so easy and absolutely fabulous! There were no leftovers. My almost-3 year old cleaned his plate and my 1 yr old had seconds. I didn't have the best of luck with the jellyroll method, so I rolled the dough out thin and used a pizza cutter to quickly slice out the noodles. Worked perfectly. Two thumbs up!

Chicken Pot Pie IX

Excellent recipe. I had some leftover turkey breast that I shredded and used instead of chicken. Following the advice of some other reviewers, I almost doubled the sauce ingredients- I doubled the flour and kept adding broth and milk until I had plenty of thick sauce for the large pie. I also added some poultry seasoning and onion powder to taste. I made sure to cover the edges of the pie with thin strips of alum. foil to keep from over-browning. My 1 year old and 2.5 year old boys cleaned their plates!

The Best Rolled Sugar Cookies

I had such high hopes for this recipe!! But, like others, the dough came out way too sticky and thin to be rolled out well. The cookies also spread out way to much while baking, so they lost all semblance of the cookie-cutter shapes. I only rolled out about 20 cookies before stopping. The dough had been refrigerated for 3.5 hours, so I don't think it was too warm. They taste phenomenal, so I am planning to drop the rest instead of rolling. Perhaps the problem was that I used the Kitchenaid mixer to mix the dough, and I used real butter. I believe some others have suggested mixing the flour in by hand and using margarine. It might help if the recipe directions were modified to add these suggestions. I might try the recipe again, but for now I am a little disappointed.

Terry's Favorite Easy Chicken Pie

Excellent recipe. I doctored it a bit for our preferences. I used fresh carrots, potatoes, and onions- sauted in garlic and butter. I added black pepper, celery flakes, and poultry seasoning. I cooked up chicken thighs and shredded the meat off the bone. I used all of the cream cheese and soup. It turned out phenomenal! Even my toddler cleaned his plate. Definitely a keeper in our menu.
