Mardi Gras King Cake

I can't leave things alone. I cut the recipe in half, didn't need 2. Instead of butter in the filling, I used a block of cream cheese and 2 tbsp softened butter. I would double it next time. Super yummy!

Cherry-Pistachio Bark

Super good. The only change I made was using dried cranberries (cheaper). I bought pre-shelled pistachios to make it easier on me. I dropped the nuts and fruit on top of the melted choc/bark mixture and then drizzled more white chocolate on top.

Tiramisu Layer Cake

This turned out so good. I made it two layers instead of 3, adding the instant coffee to one layer. I also forgot to pour the liquor/coffee mix on the cake layers. It tasted great and looked so pretty. I am impressed and will be making this again (soon I hope)

Tex-Mex Beef and Cheese Enchiladas

This was really good. Of course I made some changes. I used EL PATO brand mexican tomato sauce- it has a kick to it. Also, I used cheddar and asadero cheeses instead of american. My husband said it was the best homemade enchiladas he's ever had.

Marinated Turkey Breast

Few changes: I made this with chicken breasts; chopped garlic cloves and threw them in with the marinade; also skipped step of rubbing the breast with salt and basil, just threw them in the marinade as well. So yummy!

This is really great! I used a little less sugar than called for, due to me liking twang from the vinegar more than the sweetness from sugar. Personal preference.

Forgotten Cookies I

These were great! The only change I made was beating in the vanilla, not folding in with the chocolate chips. I left them in the oven overnight, and they came out perfect in the morning. A little like marshmallow in the middle. So good!

Mexican Cornbread II

This was a great change for a regular cornbread recipe. I made it in a mini-muffin pan, which turned out excellent! I used shredded cheddar for the cheese. So yummy!
