Delicious Ham and Potato Soup
Made this gluten and dairy free (used almond milk.). Also used homemade stock, instead of water and bouillon, yukon gold potatoes and a ham steak. Otherwise, followed the recipe exactly and it came out amazing!! Perfect for a fall day.

Baked Teriyaki Chicken
AWESOME!! Used arrowroot starch in place of the cornstarch and used a low sodium soy sauce. I thought this was a perfect dinner over jasmine rice with some roasted broccoli that I put in the oven at the same time as the chicken. I used a stoneware pan in the oven that I lined with parchment paper and cleanup was a breeze. A super easy and fast dinner!!

Sean's Falafel and Cucumber Sauce
This recipe also makes up fantastic with gluten free breadcrumbs! I put everything in the food processor. First, I pulsed the chickpeas a few times and then added the rest per the recipe. Dumped everything in the bowl with the egg and spices. Added about 3/4 cup of bread crumbs, baked at 400 for 10 minutes on each side and they were perfect!
