Oatmeal Strawberry Bread

wow. subbed out oil for equivalent in strawberry puree. this is so super strawberry flavored it's insane. if u have extra berries go for the puree substitute. healthier and delicious! thanks!

The Best Clam Sauce

a great base that lends itself well to improvising. i threw in some dried basil, some fresh spicy oregano and finely chopped kale from the window box. a cooking tip that worked out great: as the sauce is reducing, toss in the al dente pasta and let it cook down together. it will soak up a lot of the liquid and get an incredibly buttery texture.

Spanish Chicken and Rice

Um, awesome. I made this with chicken thighs, bone in. Subbed cayenne for chilli powder. Also used this crazy 9-grain rice i had, which added about a half hour to the cook time due to the intensity of the grain. Thanks and Yum!

Cream of Asparagus Soup II

very easy. my asparagus accidentally froze in the fridge and defrosted poorly. soup time! added a squeeze of lemon to give it some more complexity. may swirl in some sour cream. :D

Slow Cooker Tipsy Chicken

a great base to improvise with! i used this recipe as a base for what was lying around the house. subbed cream of chicken for the soups and capers for the olives. also used a dutch oven for 2 hours (crock on fritz). this came out utterly delightful and tender. i sauteed 9-grain rice in the butter and fat drippings from the chicken before cooking it right in the pan.

Soba with Toasted Sesame Seed Sauce

we didn't have onions so not sure how the full recipe tastes. however, sans onions, it was still delish. i made the given sauce amt with 6 oz of noods and the ratio seemed just right. sauce got absorbed in 15 minutes! instead of broccoli, i sauteed snow pea leaves in sesame oil and braggs amino acids (which i also used instead of soy for the noodle sauce). keep in mind: raw garlic is delicious but no joke. if you will be smooching, make sure it's not a first date food. ;) thanks for the recipe!

Petra's Strawberry Shortcake

this came out perfectly! an angelfood-like cake crowned in delicious strawberry goodness. i doubled the recipe to make a giant cake for a birthday gathering. if you do this - use big bowls when working with those egg whites - they get huge! the only change i made to the recipe was to sub out some of the white sugar for brown when creating the strawberry sauce, and throwing a splash of balsamic vinegar in to add complexity to the sauce as well. next time, i may try adding some almond extract to the batter - i think that would take it to a whole new level. thanks petra - this is tops!

Apple Spice Cake

i reduced the recipe to serve 7 and made it in a loaf pan. didn't have all purpose flour so i subbed in 3/4 whole wheat, and 1/4 bread flour for the 1 cup the recipe required. totally awesome. thanks!

Pizza Dough II

awesome! i made it in the bread machine and had to add about 1/8 more flour. cut recipe in half to make one big pizza on a baking sheet. added 1 tsp of garlic powder to the dough. thanks!

Pumpkin Bread IV

oh yay -- pumpkin joy! i halved the recipe and got 2 mini loaves and 2 muffins, the latter baked in ramekins. subbed in 1/2 of the sugar requirement with brown sugar, and since i didn't have ground cloves, split the difference between the nutmeg and cinnamon. also, used melted butter instead of oil. a total hit! thanks!

love it. have made three times in a week, though the second two times were smaller portions, heh. 4 cups of apples and double the equiv. of topping fits perfectly into a 9 inch pie pan. sez boyfriend: "YUUUMMMMMMM."

Zucchini Bread IV

love this recipe, been using it for years. now, on a new health kick, i have substituted 1 cup of strawberry puree for the oil. it makes these super healthier and utterly more fruity and delicious. i also do a dash of nutmeg, and a handful of whatever dried fruit is on hand...a la raisins, craisins, currants, etc... :)

Steel-Cut Oatmeal

Love this recipe. Great base to sub in any fruit and nuts on hand. Today I chopped up an apple and threw it in at the 10-minutes left mark. I have made this with pears, dried cherries and pepitas as well. I go for a dollop of brown sugar at the end. Thank you for the recipe!

Cream of Fresh Asparagus Soup II

Wow! What a great way to use some extra asparagus I threw in the freezer. I subbed in veggie broth cuz my BF doesn't eat meat stock. Also used Fage greek yogurt (whole) instead of sour cream, and a lime instead of lemon since that was in the house. This came out ridiculously good - so simple! Thank you!

Sweet Cornbread Cake

ridic. i intended to sub out the oil for more butter, but didn't have enough butter on hand, so made as is with canola oil. i usually hate baking with oil, i can usually taste it, and feel its slimy texture, but omg this turned out pretty amazing. effortless and delicious. 1/2 the recipe baked in an 8x8 pan in 30 minutes. thank you!

Steamed Fish with Ginger

so easy. insanely good. i made this with thick (2.5-3 inch) wild cod fillets, which steamed for 12 minutes. (perhaps could have done them for 10, and let them sit, as they continued to cook afterwards and got a bit firm). did not have peanut oil, which was fine. also did 1 tb dark soy and 1 tb braggs amino acids. amazing, thanks!

Honey Whole Wheat Bread

came out awesome. followed other reviews and did 2 c whole wheat, 1 c bread flour. more salt, more honey to taste. made dough in the machine and then popped in the oven for 25 mins at 350. love it!
