Oven Baked BBQ Ribs

These ribs came out absolutely amazing! I followed the ingredients exactly. I noticed the directions forget to mention to add the brown sugar to the mix for the BBQ sauce, so I just added it. Also, the directions don't say whether to use foil or not. I cooked the ribs for a total of 3 hours, 2 of those hours I covered the pan with foil (I did not use 2 pans like the directions say.) I basted the ribs every half hour (not every 20 minutes) for the first 2 hours, then took the foil off and basted twice in the last hour. The ribs came out so yummy! Don't worry about the sauce looking watery. The last hour in the oven without foil thickened the BBQ sauce up nicely! Ribs were practically falling off the bone when finished. YUM!

BBQ Pork for Sandwiches

This was so easy to make! I used 3.5 lb of petite roast for pulled pork, and I had this in my slow cooker for 10 hours. By that time the meat was so easy to shred! The pork was so good by itself I almost didn't want to put BBQ sauce on it LOL. So easy and yummy! Def a keeper :)

Korean BBQ Chicken Marinade

This marinade was really good! I followed the directions exactly except the 4 teaspoons of hot chile paste. I thought the lemon added a nice touch to the flavor & I used chili powder in place of the paste. I wound up marinating the chicken for only 2 hours (found this recipe at the last minute) & baked the chicken, covered with foil, for a half hour, and then without foil for about 15 minutes to brown/crisp the chicken. It was great! I had followed the suggestions of others to put this on veggies also, but that was "too much" flavor. So my personal recommendation is to only put this on the chicken and let the sides be. Will definitely make again!

Mushroom Sauce Baked Pork Chops

I just made this for dinner tonight and it came out really good! I saw some of the pictures people put up and their gravy looked white and unappetizing. To add color, I used golden mushroom soup instead of the one called for in the recipe. I made sure that when cooking the pork chops in the skillet that one side was really browned and golden and made that "face up" in the baking dish. I also used white wine to deglaze the pan after cooking the pork chops to add flavor and color to the gravy. The soup and deglazing added such a pretty and appetizing color to the gravy! I sliced my potatoes very thin and it still took an hour, so keep checking your potatoes to make sure they're done. With my own tweaks, this recipe was so good and simple! :) Def. a yummy keeper! :)

Puerto Rican Garlic Marinade

FANTASTIC!!!! The only change I made was I reduced the salt from 1 Tablespoon to 1 TEASPOON. This was excellent!!! I marinated thin steaks for 8 hours and cooked them on the grill. The hubby RAVED how good they were. I never knew something so simple could be so delicious! Definitely a keeper!

Campbell's Kitchen Chicken Broccoli Divan

Really easy recipe for a quick dinner. I finely chopped the cooked broccoli and combined the chicken, broccoli, soup, and milk before adding to the pan. This gave the mixture a chance to "cook" for a few minutes so that it could thicken & not be runny/soupy. Instead of using breadcrumbs, I used crushed up Kellogs Corn Flakes cereal. This added a nice crunch to the top of the mix, which my family loved! Definitely recommend. Served w/ rice to make it more of a meal.

Texas Cowboy Stew

This recipe was so easy to make & delicious too. For the "salt & pepper to taste" I used 1 TBSP of Goya Adobo & 1 Packet of Goya Sazon Flavor Packet With Coriander & Annatto. I changed the serving size to 5 and this still filled my crock pot to the top! For some heat, I added Cholula Hot Sauce to the adult servings. I will definitely make this again as it was so easy to throw in a crock pot and the whole family enjoyed it :)

Lemon Garlic Tilapia

This recipe is so simple & delicious- I think I made it once a week! The only change I make is that I saute the butter and garlic together before adding to the fish. I've made this many times & it always comes out fantastic. I usually make this with some black beans & white rice :)

Traditional Mashed Potatoes

These potatoes were great! I use the same ingredients when making potatoes, but this helped get them to the right consistency. I found when I did the exact measurements, the potatoes still had a gummy consistency. When I doubled the milk and butter, the potatoes finally came out creamy & fluffy like everyone else raved about. 4 stars b/c I still had to make adjustments. 5 stars when I doubled the milk & butter in the recipe. So fantastic, thank you!

Chicken Scarpariello

Just made this tonight & it came out excellent. I followed the ingredients exactly, except adding a little bit of flour to thicken the sauce, and I stirred in some chopped spinach for taste/color. Served over ziti noodles. I let the sauce simmer for 20 minutes while the noodles boiled & the garlic bread cooked in the oven. This tasted great & was so easy. My 2 year old loved it. Oven Roasted Potatoes

I love these potatoes! I follow the recipe exactly except bake them at 425° instead of 475° for 30 mins. This is just my preference, but I also added "herbed butter" when the potatoes are done cooking. The herbed butter is 3-4 tbsp of room temperature butter mixed with italian seasoning (the same stuff on these potatoes.) When the potatoes come out of the oven, I put the potatoes in a bowl, mix with the herbed butter, and then serve. They're delicioussss that way & then it's 5 stars. Give it a try- but regardless these are awesome! Thank you.

Mom's Best Pork Chops

YUMMY! I followed the recipe exactly, except just seasoning the porkchops themselves before breading with the cracker mixture. They turned out so good- my fiance who is so picky raved about them! I baked them for 40 mins, flipping once, and they turned out fine & not dry. This recipe is definitely a keeper, thanks!

Slow Cooker Chicken Taco Soup

I LOVE, LOVE, LOVEEEE THIS RECIPE!!! I have made this so many times as either a really hearty dip for company with tortilla chips, or I buy shredded lettuce and then put the taco soup on top of it and it's pretty much like a taco salad. The only difference I make in the recipe is using chicken broth in place for the beer. My boyfriend loves when I make this. So simple and delicious!!!!!! :)

Italian Breaded Pork Chops

I loved this recipe! Simple, quick, and YUMMY!I usually make fried pork chops and this was a great alternative. I recommend using less egg (I had 2 large eggs and still had leftovers). I seasoned the pork chops with garlic powder and oregano. I didn't have parmesan cheese handy so I used shredded mozzarella and cheddar cheese instead. I didn't have an oven-proof skillet so I first used a non-stick skillet and then put them in a glass pan covered in foil for the 25 minutes in the oven. Came out moist and delicious! Grown Up Grilled Cheese Sandwich

This was delicious! The only change I made was I put extra tomato & avocado slices on each sandwich (my preference!) The flavors came together so well! I think next time I'll add a slice of bacon :)

Potato Pancakes II

Just made these- they were a great recipe for my leftover mashed potatoes. Next time, I will not add salt. I usually don't mind salt, but between the salt from the cheese & the salt already in the prepared mashed potatoes, these were a bit too salty. This recipe as listed is 4 stars. Very basic & easy. Next time, I will add some garlic or veggies for a yummier potato pancake. Also made these thin & no bigger than a sausage patty. Had no issues with breakage/mess making them this size. Thanks for the recipe!

Broccoli with Garlic Butter and Cashews

Awesome! Used frozen broccoli b/c I found this at the last minute. Also didn't have cashews, but followed everything else exactly. Broccoli was so yummy. Will def make again. (PS: This is coming from someone who could care less about broccoli, so I'm impressed!) Update: I have made this over & over again. I reduce the butter to make it a bit healthier, and it's still delicious! I've also used this sauce on spinach & my 2 year old loves it! Loooove this recipe!

Simple Sloppy Joes

These sloppy joes were so tasty! A great idea when you need dinner done quickly. I followed the recipe exactly, except I scaled it down to 6 servings since I was only using 1 lb of ground beef. So much tastier and less salty than those packaged seasoning mixes. Had it with french fries and it was delish :)

Garlic Cheddar Chicken

Loved it! I didn't use any parsley because I don't have it at home, and I seasoned the chicken lightly with Goya Adobo in place of the salt and pepper the recipe calls for. I also used Progresso Panko bread crumps in PLAIN (the oregano & cheeses seasoned the panko bread crumbs.) I used an aluminum pan to bake the chicken and did not end up with a soggy bottom to it. And the panko added a great crunch, so I didn't need to use the broiler setting at the end of cooking time. Will definitely make again! Thanks Baylor66!

Pollo (Chicken) Fricassee from Puerto Rico

I love this! I'm Puerto Rican & this is authentic. The garlic, peppers, onion, etc that you puree together is called "sofrito" so I always have this blended on hand. (I make batches ahead of time and freeze them into small batches). The only change I make is I usually add some veggies, even if it's small corn on the cobs or just mixed stew veggies. I serve this with white rice and tostones (which are fried plantains). Delicious!! I make this all of the time.
