Banana Crumb Muffins

Meat Pie (Tourtiere)

I made this last night but halved the cinnamon and put in 1/4 teaspoon of allspice. Also put in 1/2 ground pork and 1/2 ground beef. I drained it after frying and then added spices and water. It was perfect although as I omitted the potato, it didn't stick together. Next time I'll add the potato cooked in the microwave. I also cheated and used pillsbury pie crust - I don't like it for sweet pies but for savoury it is fine. Will make again and again.

Cabbage Roll Casserole

I have a similar recipe that calls for milk and flour instead of the broth and is topped with cheddar and I love that recipe. I decided to try this one as it's healthier but for some reason thought the amount of liquid would be too much (I know, no one else says it's a problem in their reviews...) so used only 1/2 the broth. It was NOT enough. You must use all of it. Good and flavourful.

McCormick® Gingerbread Men Cookies

I made these and they worked well. I added 50% more cinnamon and a pinch of nutmeg. I also rolled thinner (cooked for less time then) and used small men to get more yield. Other than one batch I forgot to take out, they were great. I froze a bunch and will take out and decorate nearer Christmas!

Pumpkin Dessert

This was easier to make than pumpkin pie (I always make homemade crust which is some work to make and roll out) and the flavour are similar. My guests asked for seconds and even someone who hates pumpkin ate it. i did add the same spices I put in my pumpkin pie (cinnamon, cloves, ginger) as I don't use pumplin pie spice.

Boston Brown Bread III

very good. rises to two - three times the volume and is lighter than expected. I used Splenda brown sugar (so used 1/2 the volume) and it was a little sweet for me. Next time I'll reduce. Also, the cooking time was too much. After 30 minutes I reduced the temp to 325 and covered with foil to prevent over-browning. It was done after 45 minutes

Teriyaki Sauce and Marinade

i added 1 tablespoon of chili paste instead of pepper and red pepper flakes, increased the sugar by a smidge and used red wine vinegar instead of mirin. Also used corn starch to thicken. It was awesome. Served with salmon stirfry. Will make again.

Grandmother's Pound Cake II

made this and it is soooo easy and great. I put in 2 cups sugar and 1 cup splenda and then because splenda doesn't rise the same added 1/2 cup skim milk powder and 1/2 teaspoon baking soda. It was beautiful and we're eating it with fresh strawberries. Cooking time was lower than recipe calls for so be careful.

North Carolina-Style Pulled Pork

made the vinegar sauce for some left over chicken drumsticks I'd bbq'd. Simply shredded the meat and placed in the sauce and it was delicious. I didn't have cider vinegar so used 1/2 red wine vinegar and 1/2 balsamic vinegar. It worked fine.

very easy and delicious. I prefer without the icing as it's too sweet for my liking. I love that they're chewy. I cooked for only 20 minute and it wasn't quite enough.

World's Best Scones! From Scotland to the Savoy to the U.S.

I did 1/2 sugar and 1/2 Splenda and left out the currants as well as the topping. They are light and fluffy but a bit sweeter than I like. Portions are small so beware if you care about the calories - it's high! Will try again though.

Banana Bran Zucchini Bread

I used 2 bananas instead of the pumpkin as I only had a large can and didn't want to waste the rest. I also used 1/2 cup lite syrup and 1/8 cup sugar and an 1/8 cup splenda (I don't taste the splenda if I use this little bit). I also used quick oats instead of bran simply because I had them. I didn't process them as someone else did but would next time. I also added 1/4 cup water. All in all, they are OK. I cooked for 30 minutes and it was too long. Not bad, but they taste healthy.

Paska Bread

I have another paska recipe that has more eggs and sugar so thought I'd try this one and it's good. I left off the egg and butter on top and I only used 12 cups flour total, not 4 plus 12 as the dough was a good consistency then but otherwise followed it exactly and it's a nice, slightly sweet bread. My other recipe is fluffier and sweeter but I will make this one again as it's healthier.

Spruced Up Mashed Potatoes

made these for Christmas dinner as I'm trying to eat more veggies and the texture/colour was right but the cauliflower made them a little more bitter than plain/regular mashed potatoes. Next time I'll add 1T of sugar to offset that. Will make again. Also, made with broccoli instead of cauliflower and added cream cheese instead of butter. Delish.
