Potatoes and Peppers

Great recipe! Reminded me of restaurant potatoes! I used about half the oil since my pan was nonstick and it wasn't greasy at all. I don't like my potatoes quite so blackened so I cooked the potatoes in the microwave for about 6-7 minutes while I fried the onions and peppers.

Easy Roasted Red Pepper Hummus

I've made this twice, once without tahini and then I finally went and bought the tahini and it was so much better! I also cooked the beans and added a t. olive oil and I think it made for a smoother consistency. It's really good!

Beet, Fennel and Mandarin Orange Salad

This was great! I made this for a dinner party and even my picky eaters went for seconds. I didn't have have sherry vinegar so used a mix of red wine and balsamic and scallions instead of shallots. But I think the best part about the salad was the goat cheese so don't leave that out.

Bella's Rosemary Red Potatoes

I did half with dried rosemary and the other half with fresh rosemary. I liked it a lot better with the fresh but I will add more than 1T next time as it needed a little extra. Also, I microwaved the potatoes for a few minutes to lessen the cooking time.

Delicious Ham and Potato Soup

I made this the first time last month and I have now made it 4 times since then. It's my go-to recipe when I have potatoes to finish up. I follow the directions unless I don't have an ingredient or I have others to use up, ie leftover bacon is fantastic, chicken is okay, sometimes I leave out the celery if I don't have it. Ham or bacon give you the most flavor though. Seems to keep better than mashed potatoes so works well for leftovers.

Fabulous French Loaves

I'm not sure if I did something wrong or what but it was soo sticky. I had to keep adding flour again and again to even get it off my fingers. It actually turned out well and tastes pretty good but it was so frustrating that it didn't feel like bread dough should. I will try again - see if maybe I just messed it up so will put it at a neutral 3 for now.

Clone of a Cinnabon

Fantastic! I made them in the evening and put them in the fridge overnight. Then I let them sit out for 30 minutes before I put them in the oven. Worked like a charm, they rose both overnight and again before they went in the oven, probably tripled from when I first put them in the pan. I reduced the sugar by about 1/3 and they were still sweet but I might do a little more next time as I like them really sweet.

Waffles I

This has become our standard waffle recipe. Although I 'mom' it up a bit and use whole grain flour and coconut oil/applesauce in place of oil.

Apple Squares

This was great! I used pecans instead of walnuts and used a crumble topping with 3 T oatmeal and 1 T butter in addition to the sugar and cinnamon. Wish I would have made a double batch.

Pumpkin Bread

I have tried a couple pumpkin bread Allrecipes and this is my favorite. I think it's the butter vs the oil, the consistency is better and it's richer. Also, I prefer it without the salt, keeps it sweeter. One thing I did was after I greased the pan I sprinkled cinnamon/sugar and flour on the bottom and sides and then sprinkled the top with cinnamon sugar. On one I sprinkled some sliced almonds and it looks pretty cool and the tastes go well together but my kids weren't very happy about it. :)

Farfalle Festival

Wow, this was good. In fact, DH said this is the best thing I've ever cooked! I didn't have any alfredo so I just used about 1/2 c heavy cream and added 1/2 cup grated parmesan cheese until the sauce was creamy. It was a super easy way to use up some leftover chicken.

It was good but there are a couple othes on the site that I like a little better. My kids liked this one best though, it seems smoother in texture than some of the other ones.
