Chipotle Shrimp Tacos

I thought it was great! I only used one chipotle pepper and it was plenty spicy (so much that my kids wouldn't eat it any of the shrimp without an extra dousing of lime juice). I added raw sliced red onions and kept thinking how a little queso fresco would have put these over the top! Wish I would have had some on hand!

Sweet and Sour Chicken I

The entire family said they would eat it again! I excluded the food coloring and the corn starch and used coconut oil instead of vegetable oil. I am glad I took advice of the earlier reviews and added powdered garlic and dried parsley to the batter. The chicken did take a lot longer than I expected, I'm glad I started early and then kept it warm in the oven.

Waffles I

This has become our standard waffle recipe. Although I 'mom' it up a bit and use whole grain flour and coconut oil/applesauce in place of oil.

Beet, Fennel and Mandarin Orange Salad

This was great! I made this for a dinner party and even my picky eaters went for seconds. I didn't have have sherry vinegar so used a mix of red wine and balsamic and scallions instead of shallots. But I think the best part about the salad was the goat cheese so don't leave that out.

Farfalle Festival

Wow, this was good. In fact, DH said this is the best thing I've ever cooked! I didn't have any alfredo so I just used about 1/2 c heavy cream and added 1/2 cup grated parmesan cheese until the sauce was creamy. It was a super easy way to use up some leftover chicken.

Baked Spaghetti

Bella's Rosemary Red Potatoes

I did half with dried rosemary and the other half with fresh rosemary. I liked it a lot better with the fresh but I will add more than 1T next time as it needed a little extra. Also, I microwaved the potatoes for a few minutes to lessen the cooking time.
