African American single mom of 1 who loves to cook, but rarely has the time. I am the person who everyone looks forward to dining with for all of the holidays, sunday dinners, and even weekend dinners. For the past 5 years my daughter and I have stuck to a diet of no beef and no pork. (We do indulge in pepperoni and bacon in the cabbage. Just can't leave it alone) I am looking for
My favorite things to cook
Anything with ground turkey, my famous oven fried chicken wings, and grecian chicken. Basically anything that I can throw in the oven and forget about.
My favorite family cooking traditions
Thanksgiving and Christmas, all of my friends and family come to my house to eat, open gifts, and play family games.
My cooking triumphs
Expert with ground turkey. Most people don't realize that they are eating ground turkey, and not ground beef.
My cooking tragedies
Homemade salsa! My god, it was a total disaster!!! I love salsa, but I can't cook it to save my life. I used fresh tomatoes and put them straight from the store into the blender with spices, onions, and cilantro. Terrible, terrible, terrible idea.

Barbie's Tuna Salad
I truly enjoyed this tuna! Typically I only enjoy sweet tuna, however, this was great. I did make a few changes, such as adding crushed red pepper, red onions, and celery. I also didn't have dill weed, but the tuna still turned out great. Thanks for posting!

Shrimp and Asparagus
This was a good dish. I did switch the pasta; and use the ideas of some other reviewers. Good base; seasonings are open to your individual taste.

Asparagus Parmesan
Just made it. Used the garlic and onion, however, my cheese didn't melt? I was unsure how to do that part because I did not want to overcook the asparagus. This was my first time eating them, and they were delicious.
