Southwestern Style Twice Baked Potatoes

very good, definitely sautee veggies first. i also used a chorizo link chopped up instead of the bacon. 2 potato halves are more than enough for a meal.

Ham and Beans

good base recipe, but I couldn't resist making some changes. as all reviews said, cut back on the brown sugar. but i used canned cannellini beans, rinsed and drained. added asparagus tips and half a poblano pepper chopped, about 15 minutes before it was done cooking, and spinach about 10 minutes later. came out good. i cooked uncovered until almost all of the water was absorbed/evaporated, then i began adding the veggies. came out nice. i basically used what i had on hand, and it was a nice meal out of leftovers.

Drunken Mussels

taste was good, not outstanding, but because of the simplicity, it gets 4 stars. make it even easier, just grill the mussels, then drizzle the sauce over them in a bowl.

Slow Cooker Guisado Verde

very good, almost too much meat, if that's possible. I would probably cut back to 1-1/2 lbs of meat. i was worried that with all that water, it'd be bland, but the flavors and the fat from the meat made for a real nice taste. also used only about 3 cups of water.

Zucchini Casserole I

Very good and very versatile. I made a few changes because I only had 5 cups of zucchini after chopping it up. I used chopped sweet potato, chopped broccoli, and some frozen corn for the remaining 3 cups and I also used bread crumbs instead of corn flakes. I also cut the oil and the cheese down for a healthier dish. I plan to make this again, but using some different ingredients.

Roasted Garden Tomato Basil Soup

excellent soup especially for what I have in my garden. i didnt quite puree it, so it was a little thicker, but it was good. i used someone's suggestion and added some more sauteed zucchini, after blending the soup, that i set aside from earlier, for some chunkiness. also used light cream rather than heavy, it was delicious. and its got a nice spicy kick from the red pepper. will make again.

Italian Style Flounder

a little light on flavor, but pretty good for such a fresh and healthy dinner. will make again and probably top with some fresh basil after cooking for additional flavor, and maybe use a fresh lemon. the flounder fillets i used were on the thin side, so it only needed to bake for 15 mins
