Zucchini Casserole I

Very good and very versatile. I made a few changes because I only had 5 cups of zucchini after chopping it up. I used chopped sweet potato, chopped broccoli, and some frozen corn for the remaining 3 cups and I also used bread crumbs instead of corn flakes. I also cut the oil and the cheese down for a healthier dish. I plan to make this again, but using some different ingredients.

Roasted Garden Tomato Basil Soup

excellent soup especially for what I have in my garden. i didnt quite puree it, so it was a little thicker, but it was good. i used someone's suggestion and added some more sauteed zucchini, after blending the soup, that i set aside from earlier, for some chunkiness. also used light cream rather than heavy, it was delicious. and its got a nice spicy kick from the red pepper. will make again.

Italian Style Flounder

a little light on flavor, but pretty good for such a fresh and healthy dinner. will make again and probably top with some fresh basil after cooking for additional flavor, and maybe use a fresh lemon. the flounder fillets i used were on the thin side, so it only needed to bake for 15 mins

this is a great healthy lunch. i skipped the green onion and parsely, and diced up a small red onion and some fresh thyme leaves instead. and i didn't have spinach so i just scooped it onto pretzels, and its even good by itself.

great marinade. great with bone in chicken especially. i've been adding some lime zest as well as the juice. easy to adjust the amount of heat with the cayenne.

The Best Fresh Tomato Salsa

used hungarian wax peppers, some mild chiles, and 1 super chile and romas. used a food processor so i just tossed everything in there and pulsed it- done in 10 minutes. ive made it a couple of times and its easy to adjust to your liking.

added a lemon, quartered. it was a bit on the bitter side, but possibly due to the lemon. simple though, and the chicken felt apart after cooking for 8 hours.

West African Vegetable Stew

I think I may have overcooked the sweet potatoes a little, because they were definitely on the soft side, especially the leftovers. But the taste was there still. It was an interesting flavor, for sure, but it was good. Unique blend of ingredients. Would probably make it as a side dish in the future, as opposed to the main.

Probably closer to a 3.5 rating, but rated it 4 stars because the ingredients were so common, I was able to make it on a whim and it was extremely simple. Would make again, but will probably add something...onions or something

Hidden Cheeseburger

almost like a hamburger calzone! very good but a pound of hamburger makes 2 HUGE burgers. I think I'd make 3 or 4 with a pound next time. I'm gonna try some red hot in it next time also.
